I freeze all my leftovers, and when I have enough, I make a pot of " Depression Soup". You never know what you're getting, it's never the same each time I make it, but it's frugal and delicious every time !

I like making a one pot meal in my rice cooker. It's only a 4 cupper, but good for one person. I put in two pieces of chicken or a pork steak on the bottom, followed by 1/2 C of rice, top with some frozen veggies, then add a bit of salt and some marg. Then 1 C of water. In 45 minutes, I have a cooked meal. I eat one piece of chicken or 1/2 of the pork steak and quite a bit of the rice and veg. Once it's cooled, I put the lid back on and pop it in the fridge. The next day, I cut up the meat, add an egg and fry it up. Add a little soya sauce and it's a cheap version of fried rice. If there's any rice left over, I'll eat it the next day with a couple of fried eggs. Jon in rural BC, Canada

I make a crust with shredded potatoes mixed with a bit of oil. Baked until brown. Then put in spinach, onions, eggs and spices and bake until done. A good breakfast for cooler days.

I know it sounds crazy, but we don't like pastry. But what I do make is a very thin rolled out pizza dough and I line the bottom of my baking pan with that and I pre bake it after I poke holes all in it and then I put the keys inside that. I know it's unconventional but it does taste really good

Those are great lunchbox ideas! Do you know how to check eggs to make sure they are still good? You take a measuring cup or deep bowl and fill it 3/4 full of cool or cold water. Take one egg at a time and place it in the water. If it sinks and lays down, it’s really fresh, if it stands on it end (it MUST be touching the bottom of the cup or bowl) it’s still good but needs to be used soon. If it floats, throw it away. This works because as eggs age the air pocket in the shell starts to get bigger. A larger air pocket in the shell means the egg is at least 1-2 months old and needs to be used very soon AS LONG AS THE EGG DID NOT FLOAT. If it floated DO NOT eat it. If you have too many eggs break them into a container or plastic baggie (2 or 3 eggs per container or baggies). Beat them with a fork to mix the whites and yolks. If using a baggie, squeeze as much air out of the baggie and lay the baggie flat on a cookie sheet or tray. Then pop the container or baggie into the freezer. Make sure you label them with the quantity of eggs and the date. They are best used within 6 months. When you want to use the eggs, just thaw them overnight in the refrigerator. If they are in a baggie, place the baggie in a leak proof dish. The reason I put 2 or 3 eggs per container or baggie is because those are the quantity that I usually need for recipes.

On my batch cooking days I make homemade baked beans and then freeze them. I also often make cheese quesadillas for lunch - tortillas, whatever veg need using, salsa and cheese to stick it all together. Good hot or cold. Hi Clare, look at my pinned comment at the top of all the comments. I always make shortcrust in the food processor. It needs very cold butter/lard/cooking margarine which I put in the freezer for 30 minutes before using, also pastry must be chilled for one hour before rolling it out.
