A trick I learned from a excellent chef. Chicken breast will always be moist if marinated in mayonnaise then as you cook it no sign of mayo only very MOIST chicken.

Both look delicious! Very helpful and very useful! May I just say, what an absolutely BRILLIANT way of making Coq au Vin!!! I don’t have any specific requests for you. I live by myself, and I am already pretty frugal. Like you and your hubby, I don’t mind eating the same thing several days in a row. Doesn’t bother me one bit. If I don’t want to, I just freeze in portion sizes. Found you a while ago via Frugal Jo, and I am so happy I did. Good luck on your journey to a new job. If anyone can get through this, you can.

I will give it a try to the sausage casserole and may be the "coq au vin" with chicken. My cheap trick to save money :add vegetables . this evening I made a chicken curry and add one zucchini instead of one of the chicken breast. More to eat but healthier ;) Zucchini are still on season so not expensive. Bises

Nearly at the 5k! Good work as I’m loving these meals and costings. My husband unfortunately hates any kind of beans thanks to his school meals experience at primary school from over 55 years ago! Especially the white ones. I’ve gradually got him to accept casseroles by using quality meat and cooking properly so no gristle. So funny. I’ll try these without the beans. He’ll be happy.

My husband makes a big batch of Bolognese sauce with lots of tomato, onion, capsicum and carrots. We eat one as spaghetti Bolognese that day and divide the rest up for the freezer. I usually make one into lasagne and often add beans, more capsicum and spices to turn another one into chilli con carne. I tend to freeze casseroles without veggies so the veggies aren't soggy, then add them when reheating later too. Veggies do make it go further as well as making it much healthier. Meat has increased in price a huge amount here in Australia since covid, so I'm certainly not letting any go to waste. I like to roast a chicken for one dinner then use the leftover meat for another dinner as a pot pie or stir fry, then use the carcase to make stock for soup or risotto. I save the carcases in the freezer until I have two or three to make a big batch of stock.

I like the fact that you eat a good quantity of vegetables with the casseroles. If they taste as good as they look, fabulous. In SW France I cannot buy chicken breast that cheaply. Not even in Lidl. Anyway, I prefer chicken thighs for the cow au vin. I feel sorry for people who have never learnt to cook simple but tasty meals. Those meals look delicious! 😋 I have never thought to add potatoes as a topping to anything that contained beans like the hot pot meal. You might want to try stirring in just the dry seasonings (spices) to the pot of sautéed meat and vegetables prior to adding the wet ingredients after you have browned the meat and onions, pepper or celery. This is called blooming the spices- it allows the oil soluble herbs and spices to rehydrate in the cooking fat and really wakes up their flavors. Things like chili pepper, cumin, garlic, dry herbs all benefit from this technique. It greatly enhances the finished dish by distributing the flavors of the herbs and seasonings more evenly throughout the other ingredients. As far as other meals for you to make, I like everything that you cook so I don’t really have any ideas.
