They have to be otherwise they would be short of customers. It is quite a well known fact that you are more likely to suffer food poisoning from a 'reputable" restaurant than a street food vendor. Look for the queues and you can't go wrong. Of course, tourists will always suffer some sort of food problem if they come from a country which is too full of red tape, health & hygiene laws etc. Remember the days in UK when butchers and fish-mongers had the produce on open stalls outside the shops on the streets? No gloves, no health & safety laws and people did not have as many illnesses then as we do have now we are "civilised"!!
