DENJIRO: The liquid inside the bottle wasn’t simple water. It’s actually supercooled sodium acetate. This solid sodium acetate turns liquid when heated to above 58 degrees Celsius. When it’s cooled to below 58 degrees, it should turn solid... However, if you slowly, carefully cool it, it remains liquid even when below 58 degrees.
This is called “supercooling.” If you shock a supercooled liquid, it turns solid. When I did the magic before, I had some sodium acetate powder on my finger. That was what shocked it.
Actually, when supercooled sodium acetate turns solid, it releases a lot of heat. In its liquid state, it’s about 24 degrees Celsius. Let’s put in some sodium acetate powder I have here.
The temperature is rising rapidly. It’s gone up to 54 degrees Celsius. A lot of heat is released just like this when it changes from solid to liquid state.
Now then, let me show you one more magic trick with sodium acetate. I have here a lot of supercooled sodium acetate in this jar. I’m going to put powdered sodium acetate on my hand like this and then put my hand in the jar. Here we go.
