Bittermelon is an acquired taste. I've been eating it since as a kid. As long as you do it right & tame the bitterness out of it thru blanching & marinating as well as softening it, then it works. For those who have never tasted it, it is like the taste of chewing on a rubberband & having that kind of taste although not as strong as the taste of a rubberband, heh. Once you boil it for a bit, the strength of the bitter lessens further than what it is raw. You can really only find it at Asian grocery stores 99% of the time, because it is not really part of the western palate. Again though, I like it, I've cooked beef with bittermelon before for many years. :)

It's an acquired taste. Deeply bitter but salty flavors help balance it out. Great for lowering the blood sugar though.
