Sugar Cookie Truffles
A super easy recipe for sugar cookie truffles with only 4 ingredients.
The truffles have a moist sugar cookie center with a white chocolate shell.
These truffles are great for the Holidays and you can make them in about an hour.
The recipe yields about 16-18 truffles, but you can easily double the recipe for more.
Recipe:
Ingredients:
about 18 each- hard sugar cookies, (we used Pepperidge Farm Zurich) cookies for this recipe
2.5 oz- softened cream cheese
10 oz- white chocolate melting wafers
1/2- vanilla bean, or 1/2 tsp vanilla extract
Optional 1 tsp- candy sprinkles
Method:
Crush cookies into a food processor and blend until a med fine powder.
Scrape vanilla bean and add to the cookie powder.
Add cream cheese and blend until you have a dough.
At this time, you will need to use your personal preference. If the dough is too loose, add cookies, if the dough is too dense, add cream cheese.
A loose dough will be more of a cake pop, a denser dough will be more like a truffle, you can choose how you like the consistency at this time.
Once the dough is formed, refrigerate for 20 minutes.
Scoop the dough and form a ball, (we use a 1/2 oz cookie scoop).
Place the dough balls on a baking sheet lined with parchment paper.
Freeze the dough balls for 20 minutes, this will help keep them together when dipped in chocolate.
Melt the chocolate in a double boiler, or you can use the microwave, do not over heat the chocolate or it will separate.
Drop the dough balls into the melted chocolate and cover completely. Use a fork to remove.
Shake excess chocolate off the dough balls and set gently on parchment paper to harden.
Let the chocolate set for 15 minutes and trim of the excess chocolate with a knife.
Sprinkle with candy if desired.
