Totally agree with you about freezing the tomatoes. I did that for the first time this year and was not happy with how mushy and watery they were when I thawed them to can

I got one for Christmas from hubby and I am loving grinding my own flour, I use Einkorn often but mostly another whole grain, can’t remember the name…it’s a hard flour. I liked Kamut as well. You can also thaw frozen tomatoes in a garbage bag. Just put the bag in the cold water. They will still thaw, but won't get as mushy. Or, just put them frozen right into a jumbo roasting pan and they can roast all night.

I’ve started using einkorn flour with my sourdough starter. It’s definitely different in use and taste. We like the taste…it’s nutty to us. I’m by NO means a baker, so I’ve tried make einkorn bread about six times now…still trying to get that perfect rise and tender crumb.. Great video! 😊

It is very tricky to figure out! It definitely doesn't rise near as much as when using traditional flour. From watching other videos and recipes a lot of people add ascorbic acid to help get a better rise. Thank you so much!

I want to share this tomato freezer tip to avoid watery tomatoes. I cut them in half and core them, then toss in a ziplock bag to freeze. Then when I'm ready to make my sauce, I dump them, still frozen, into a roaster pan and put them in the oven at 415 until the tops brown. I let those cool and then the skins slip right out and you're left with roasted tomatoes with deeper color and flavor - and very little water. I grew up blanching and skinning - I'll never do it again lol

I used the recipe from the ball book for my ketchup as my basic recipe and then doctored it up to my liking. It's by far the thickest, most delicious ketchup that I've found so far. Everyone that has put it on their wiener or burger says that it's delicious. Heck, one friend that doesn't even like ketchup wanted it on his hotdog. Tomatoes are our biggest crop because we make so much with them. As for bugs, keep neem oil on hand. Organic, natural bug killer. Only kind my husband will use. He took classes on pesticides and refuses to even bring them anywhere near our home or food.
