Years ago when my wife was still alive and the kids were small my wife canned 900 quart jars one year - every thing from tomato sauce - cherries - peaches - beans - etc. - the kids still remember how good the canned cherries with home made yogurt was - makes one feel good when you have a lot of canned food stored and a large firewood pile - God bless

I started canning a few years ago an I love to watch everything you can. It never sounds repetitive the way you show us and I appreciate your experience and knowledge. It helps me see I’m doing things right or wrong. A big thank you to you both.

You guys inspired me to try canning this year. Everything pickled with 1/2 vinegar/water plus spices, but I did okra, cucumbers, peppers, tomatoes, green beans, and Swiss chard. Everything’s been delicious so far. And my water bathing is improving. Last time 6 out of 8 sealed.

I love that you two never get upset when things go awry, you just back up and do it another way. Tomato popsicles - that may catch on. That was a beautiful productive harvest.

I throw my extra tomatoes in the freezer, too. It works pretty well.

I have not ever tried to freeze my tomatoes. I thought I had to either use them or give them away (until I learned how to can them). Now, I will freeze them too.

Unless I’m making fresh sauce for dinner I always freeze them to get a huge batch to can. If you cut a small x in the bottom and take the core out (with a knife or strawberry/tomato corer.) you can freeze with the skins on and just thaw or run under warm water and the skins slip right off! No blanching and peeling. Love to do it that way. You can then dehydrate the skins and make tomato powder (for thickener or reconstitute with some water to make tomato paste).

I'm 60 years old, Cascade foothills of Washington state born and raised. You two live the life that I dreamed of and never took action. I'm in awe of what you've accomplished. Anyone can have bush craft skills, anyone can have gardening skills. The MAGIC that you two posses is long suffering acceptance. Love yourself, love each other, accept what you perceive to be your partners shortcomings and press on. I'm green with envy, sad for a life squandered and grateful for the opportunity to vicariously envision my dreams through you.

In my backyard, we planted purple tomatillos about 10 years ago and they've basically gone wild in the 4 foot by 20 foot side yard that was home to my mulch pile. Most people grow them as annuals; but they are really perennials and around here if you chop them down to about 6 inches from the ground around November, they'll come back around March.

Actually tomatillos and tomatoes are annual plants. They do not survive the winter and with roots that come back like perennials. But it seems they do because the seeds over-winter and sprout in spring. We call those "self-seeding annuals" and it really depends on what kind of winters you have whether the seeds will germinate - probably not in Alaska

I live in Vancouver Canada and like you planted about 8 years ago. I tear my plants up every year so I think mine must self seed. I love them so much.They are truly prolific!

My wife and I always include tomato skins when making tomato sauce since they contain a lot of nutrients. We just grind them up with the immersion blender and no one ever notices them.

Was that sound in the background of this video pouring rain? Man, that extra covered space you two created has turned out to be SO valuable to have for projects like this when it's raining or you need a dry place to cure onions, etc. Amazing results!

Use the thick tomato sauce as a pizza sauce, for bruschetta, or to dip bread into. It is also a good substitute for catsup in meatloaf, etc.

awesome! Thanks to you I grew tomatillos myself this year ( I had never heard of them before here in Ireland). I also made Salsa Verde, so good! Basically the same as your recipe, lime and coriander/cilantro makes all the difference. I still have whole tomatoes and tomatillos in the freezer to be processed when the first batch runs out 😊

Wonderful harvest. I've had terrible luck with tomatillos. The same ladybug pests that defoliate my potatoes decimate my tomatillos. This year I've been better at squishing the little critters, so both potatoes and tomatillos are doing better than normal! Fingers crossed for a harvest this year ☺️

@@CrimeVid yeh I think they called 28 spotted lady beetle. They are different to normal ladybugs. They look similar, but destroy the garden

Canning is one of the most rewarding things I have ever done. I love to hear the pop of a can sealing, and just look at all the bounty God has blessed us to have. I congratulate you both on your hard work and your beautiful canned goods. You young people are very inspiring to us older folks, and I am always so excited to see what is in store next. I was just thinking if you decided to move to the new place, how much room you will have for a garden, animals, and even a cellar. I hope you become millionaires from all your hard work.

Great video! This is my first year growing tomatillos and making Salsa Verde and it turned out so good. I enjoy your canning videos. I admit it always makes me a bit anxious when you pull those hot jars out of the canner and the air is cool but you know what you are doing. I always look for Bo in your videos. He looks old but I really like him.

QUESTION. Have you ever consider growing cold hardy salad greens in your high tunnel? You can cover the greens with 2 layers of plastic using pvc pipes. Eric, you're a sweetheart "I can't remember anything before I meet you because you stole my heart " ♥️.

That would work really well in the spring, we are dropping pretty cold already at this point but the main issue is actual light or lack of it for growing in these months.

Eric’s comment was so sweet! And I also like green salsa better. It just has more flavor than red, in my opinion. Can you order new strainers for your machine? If not, try a food mill, it’s what I always used when canning.

Hi guys, that has got to be a two day canning record for most everyone. Very impressive. I love the Salsa Verde best myself as well. You keep putting up this much every year, you may have to dig a root cellar shed for storage. You rock! 💚

I grew tomatillos for the first time this year! They made such a wonderful enchilada sauce, I'm amazed. They were purples but they never turned purple.

Yep, definitely "toe-muh-tee-yoes". Two ll's in spanish sound like a "y" as in the word you... That's why we say tor-tee-ya (tortilla) chips and not tortaya chips. PLZZZ Eric, say it right just once 😅😅😅

Super excited about the new property! (Interested in your bee journey there! Bee's always work, it just requires experimenting ) I Keep my bees under a carport ( real dry) during winter really helps. (Also I love the wax treated bottom boards)

Amazing! a next project for Eric: build a trolley to carry all the jars back to the cabin…would be useful elsewhere too, am surprised you haven’t don’t it already. Looks great guys. Reminds me when I was a kid and would spend 2weeks in the summer at my grandparents. They had a huge garden, and I would “help” mamaw with her canning. By the way, if you can’t find room for it all, you can send the extra to me. 🤗

I'm in agreement with you about the salsa Verdi being better than the red. I like to use the green when making enchiladas.

It must feel so good to have all that food stock piled for the year! Great work, both of you. Have you two thought about rebuilding the root cellar at the new cabin up north? It looks like the ground there would be much better suited for it.

I was thinking the same. I wonder if they will bring the current high tunnel, or put up a new one. My guess is that a new one would be best, and another "someday" list might be a greenhouse.

I canned salsa verde for the first time earlier this year, I was given a couple bags of frozen tomatillos by the lady I bought starts from....I'm inlove with it and 3 out of 4 starts grew wonderfully so I'm about to make it again using my very own homegrown tomatillos , jalapeños, cilantro, onions and garlic ❤️.

During my first full year at my new property I set myself the goal of growing enough garden produce to see me through 6 months of the year. Since I never gardened before really I figured this was realistic. Well I ended massively overestimating the season & had an abundance of food I couldn’t possibly eat so I started preserving the extra. It’s a lot of work - I learnt so much watching your guys videos! Especially the importance of having kind of ‘ready meals’ canned, which I’m thrilled about for winter. I have a very limited kitchen setup here so at some point I also got a bit of fatigue around food preservation as it’s just me doing it 😅 but I’m so grateful to have all this food that didn’t cost me a anything really. Thx for being an inspiration & I’ve learned so much through your videos ❤️

Kids you can make JAM also with that stuff !!! It is so good to have in the winter time after a cold !!! Just use the jam or jelly recipe that you got and it is good on toast oatmeal grilled or baked chicken or roast beef or deer meat great on baked fish also !!!

Hey I also freeze all of my tomatoes for sauce too. Its a great way to handle the surplus that comes in waves but not big enough for a canning session.

Love that you two show the REALITY of gardening and canning projects ---didn't get to harvesting the apple sized tomatillos on time, "you spilled a little" down the blender and on the prep table, checking the canning book for the millionth time to CYA, we heard sparking and had to stop, experimenting with adding blended tomato peels for thickener. we had a large garden in our backyard growing up and our grandmother would can everything she could...we still had some canned figs, plums, tomatoes and such for a long time after she passed away..good living. thanks for sharing your life with us!!

yumm! I made green salsa last year and surprisingly I still have some left. So i'm going to grow more romas and other red varieties to make more canned pasta sauce as this is what I used the most of after my first year of canning, yay

I love it when you kids are on. It brings joy to my heart! I have 2 high tunnels and a green house in N. Florida. I get to grow year round but I don't get the same harvest since you have so much sun.
