I had a neighbor who was a delivery guy for for a variety of foods. One day he called me over to give me something. It was three bunches if celery. I thanked him. I live alone and wondered what I would do with three heads of celery. I found a recipe online for cream of celery soup. I made it and gave a pot of it to my neighbor. I thought it was one of the best things I ever made. My neighbor was over the moon about it. I didn't think I'd find a new trick at my age. Live and learn. Cheers!

I will say one thing, the rain gave you a great garden this year plus I think this is the best crop of weeds you ever had also. When it rains like that and gets warm you might as well just let the weeds go cause there is no way to keep up with them. The soup was just awesome. I would never think to can a creamed soup. Will be so interesting to see how the garden does and what will grow at the new place as its further north, I believe. You folks have built up this homestead so nicely and the next people to own it will be thrilled with all the buildings and the condition of the soils and the buildings. etc. The chickens running in the garden is such a beautiful sight...green with the color of the birds...WOW. I hope you guys keep the cabin. I love when you go to that place by boat or snow machine. Such a great location with all the fish you want. Getting there is half the fun, but not so easy on the pups. Keep up the good work!

How do you guys plan on replacing all those calories that you grow? Between fishing hunting and gathering it seems like the only things you buy are the bare essentials. Why have you decided to not grow a garden next year?

If you ever make this soup again you can make it a concentrate for canning just by omitting the milk and cream, just add milk and cream when you heat it up.

I really envy you for this great & amazing effort you got, both of you, Certainly, I could not survive one day in such an environment, even though, I lived 5 years in Winnipeg, Manitoba, coldest city in Canada, but I was young, now I am 78 , & living in Vancouver, B.C. Canada, I love to visit Alaska one day in the near future, I thought to drive up there , but I am scare to do that, I think to fly up there & rent a vehicle & tour the State around during Summer months, you are struggling daily in your life, Big Thumb up to both of you, Eric is a man of all trades, so is Arielle, knows a lots to survive, I always enjoy your videos, keep up the great job. Isn't it funny how everyone watching is so sad that you're moving?? Change is hard, even for us viewers! I was a tiny bit sad at first as well, but now I"m excited to see everything you'll be doing at your new property. As always, thank you both for sharing your lives with us. I've loved your gardening videos, and they always inspire me by demonstrating how much better we can do in our difficult conditions here. But it's good to hear you're heading over that way, because this area (I'm very near where you are now) is starting to feel almost 'suburban' by Alaska standards. If we were younger, we'd probably be doing similar. We own some VERY remote and unbelievably beautiful Alaskan property where we'd intended to retire (where it would be possible to literally be 100% self-sufficient), but time caught up with us, and it's just too hard to get there now. So while your new place is a lot further from the easy fishing and affordable supplies, and the soil is even more challenging for gardening, it's more the 'real' Alaska, and it will be great to follow your adventures there.

Your garden and the wonderful meals you guys made with your harvests have been some of my most favorite things to watch- so I'm a little sad, too. But I know you guys have big plans ahead and look forward to seeing what projects you two jump in next year! And it will be interesting to see what the garden does all wild, on its own- aside from the garlic. I bet something pops up!

My mum always made an old boiler hen recipe in winter. She’d cook the hen in the pressure cooker with lots of winter vegetable and water to get a beautiful broth. Then she’d make pretty much a white sauce but using the broth instead of milk with a butter and flour roux, all served over rice. A real winter favourite.

You can’t beat chicken shit. I put it into the soil in giant pots and grew flowers. They were so healthy and beautiful. I took some stunning photographs. minute 24 while starting the celery soup, I LOVE the smaller celery like you grow, 💚much more flavorful. I always look for the fresh, greener & thinner stalks - far superior 👌to the big white stalks in the grocery store....your soup looks AMAZING!!❣

What a gorgeous harvest you had. Such beautiful chard and celery (and some celeriac?), leaves, stems, and seed! You should have had some absolutely scrumptious and hardy soups, especially with the rutabaga, which should go well with leeks, and pork, or bacon! Later, what we call "cock-a-leeky" soup (or Potatoe-Leek Soup). Chicken base/stock, white onion, then add potatoes, cubed celery, finely sliced leeks, cross stem. Uncooked thick cut bacon, and your favorite spice blend, like Herbes de Provence (oh, wow, I had just started to write that when you said and added it. Fantastic flavors! Also, there is nothing like soup made in a big huge stock pot! It's a rule!! (Should almost be a law of the kitchen!) Great size batch, so many uses, full of nutrients for the winter larder! Seems like you came through well!

That soup looks killer! I’m a sucker for cream based soups. I’m a meatatarian through and through but creamy vegetable soups are out of this world. Actually, as I get older (I’m the ripe ol’ age of 40!(I feel at least 10 years older)) I’m liking soups more and more everyday.

I must say I will miss your garden and other things this coming year but the move, how you start everything for next year will more than make up for it all, hope that you have some-kind of a tractor to use in all that new country to work in/on, are you going to move the sawmill first, how about the chickens and their house ?, you going to start over fresh with them too, when I saw Eric taking down the electric fence I know you were moving for sure, can you post what town your going to be close to or near, be safe and may all your hopes and dreams come/happen like you want, I do see a root cellar coming your way I think, Later

USDA Complete Guide To Home Canning notes canning food with dairy is not recommended. Because dairy foods are low acid. Instead add dairy when you go to heat the canned soup base.

Another amazing recipe, although I personally would omit the parsnips. FYI, down here in Saskatchewan our climate is actually harsher and more variable than yours is at your location. We sure wish it were easier for Canadians to get a green card!

Fingers crossed that you can create a root cellar at the new place. It would be so great to be able to store all those root veggies through the winter again.

The gardener weeps at seasons end. They search for land to walk and tend. Then push a seed in soil when, They find their heart and soul does mend. I am happy you will have new land to tend...... You will find a way to get your hands in the dirt!

I live in the UK and had never heard of the vegetable Rutabaga, however I know the vegetable but in uk its known as swede. Its a very vegetable to grow and have over the winter. I'm so tempted to put some garlic in some grow pots to see what happens.

Thank you so much for having the common sense to pressure can these foods there's so much online these days where people are water bath canning low acid foods it was very refreshing to see someone take the extra precaution and pressure can bravo way to go

Now you can boil some potatoes with a lot of onions and add cream of celery soup to it for a killer potato soup! I love celery and onions and cream in potato soup

Ever try planting back the garlic you grew? Going to assume the reason you don't is because you don't want to sacrifice any of the yeild. I over grow then plant back the dominant bulbs. Have the same strain for about 15 years running. Live in north central Montana where it gets very cold in the winter and have never protected from frost but after seeing yall doing it in this video think I'm going to give it a whirl tomarrow, winter is fast approaching here. Thanks for another great video, the cream of celery soup looks absolutely amazing. Keep the great footage coming!

I'm always amazed by the amount of fertilizer you put on your garlic. Here in Europe people never fertilize garlic, it's a crop you do after a heavy feeder, like squash or tomatoes, or even after something that wasn't fertilized at all like beans. And it will grow perfectly well and fine. Maybe it's the varieties you use that have been accustomed to nitrogen, like modern wheat varieties have, but with our varieties, no you don't need anything at all, it's super easy. Hardneck, softneck, shallots, onions, they just don't need anything. If I fertilize my onions (not with powders, but just like spent barley) they get way too big, I don't need onions that are between half a kilo and a kilo.

The latitude they are at would be in Norway or Sweden. What part of Europe are you gardening in?

@@letarogers6380 I grow stuff near Paris but it shouldn't change anything. Their garlic grows from April till October, mine grows from November to June. Overall it's the same temperatures, coz garlic doesn't grow well in dry heat. In fact all gardeners here are taught that garlic, onions and shallots hate fertilizers... It destroys storage time by making them too big and wet. Not to mention big fertilized veggies = poor taste.

Maybe your soils are better overall? When I grow garlic in my Michigan backyard garden, I have to deep mulch, water it weekly, and put a general organic fertilizer in it else they are tiny.

@@jeanniecollins3332 I doubt it's the soil. After all, our varieties of garlic and onions are mainly from the middle East, no reason they'd grow better in Europe. Europe has more or less the same soils as the US, which is why you can plant trees and perennials from both continents with no issue. Maybe somehow in the US you are only sold varieties that do poorly with no fertilizers. It's a possibility. But I can tell you that every French veggie gardener has heard that you don't fertilize garlic. It's a given.

I felt like I was looking down into a snow globe. Loved the aerial view. I liked the feeling of looking out your window seeing the cat, the rooster, the snow, neat! I love celery soup. I use mine in casseroles too. Ariel, your celery soup looks delicious. Just beautiful. I love how laid back the Boys are. I've never used celery soup in a home made chicken pot pie. I'll have to try it. So good to see you both. I hope have a good week.
