Hello neighbours I hope that you were all doing fantastic and I think you so much for stopping by today. I hope that you enjoy today's video. I made a lovely pot roast. It was so tender the vegetables and everything. Just absolutely delicious. The sauce is nice. it's a winner winner Sunday roast dinner. Flavourful Sunday Pot Roast
Ingredients:
Ingredients:
- 2-4 lbs chuck roast
- Salt and pepper to taste
- 2 tablespoons olive oil
- 4 large carrots, peeled and washed and then cut into chunks ( I usually make them about 3/4 inch thickness)
- 4-5 medium potatoes, peeled and washed then cut into chunks
- 1/2 of a small rutabaga peeled and washed sliced into discs and quarter the discs to half inch or so slices
-1 cup of fresh green beans
- 3 cups beef broth
- 1 package of dried onion soup mix
- 4 garlic cloves, minced
- 2 1/2 tablespoons of cornstarch
- 1 1/2 tablespoon Worcestershire sauce or soy sauce
- 2 sprigs fresh rosemary (or 1-2 teaspoon dried)
- 2 sprigs fresh thyme (or 1-2 teaspoon dried)
- 2 bay leaves
instructions:
1. Season the Roast: Season the chuck roast with salt and pepper on all sides.
2. Sear the Roast (Optional): In a large skillet, heat the olive oil over medium-high heat. Sear the roast on all sides until browned, about 3-4 minutes per side. This step is optional but adds a lot of flavour.
3. Place the roast in crockpot / slow cooker and arange veggies around the road all but the green beans save those for last 30-45 minutes of cook time. You can add them at same time as other veggies just they will be a lot softer if you do so.
4. Make the Sauce: In a bowl, mix together the beef broth, Worcestershire sauce or soy sauce, rosemary, thyme, and bay leaves and minced garlic. Pour this mixture over the roast and vegetables.
Sprinkle package of onion soup mix over everything
5. Cook: Cover the crockpot and cook on low for 8-9 hours or on high for 5-6 hours, until the meat is tender and easily shredded with a fork.
7. Serve: Remove the bay leaves and rosemary/thyme sprigs before serving. Slice or shred the roast and serve with the vegetables.
NOTE : Last 30-45 minutes of cooktime add green beans and at this time if the sauce isn’t thick enough make a cornstarch slurry with 1 tablespoon cornstarch and 3 tablespoon water and mix through the sauce in the pot.
