• Tasty Paruppu urundai kuzhambu
Paruppu urundai ingredients.
1. Toor dal 1/2 cup
2. Channa dal 1/2 cup
3. Pottukadalai 1/2 cup
4. Freshly grated coconut 1 cup
5. Green chilli 3
6. Coriander leaves few
7. Curry leaves few
8. Garlic 4 cloves
9. Ginger 1 & 1/2 inch
10. Small onion 10 to 12
11. 1 big onion
12. Pepper 1/2 tsp
13. Cumin 1 tsp
14. Fennel 1/2 tsp
15. Cardamom 1
16. Garam masala 1/2 tsp
17. Turmeric powder 1/4 tsp
18. Salt to taste
Kuzhambu ingredents
1. Grated coconut 1 cup
2. Green chilli 2
3. Garlic cloves 2
4. Garam masala 1/2 tsp
5. Cumin seeds 1 tsp
6. Coriander powder 2 tbsp
7. Oil 3 tbsp
8. Mustard seeds 1/2 tsp
9. Curry leaves few
10. Onion 1 chopped
11. Tomato 1 chopped
12. Turmeric powder 1/4 tsp
13. Water for kuzhambu
14. Rock salt to taste
15. Coriander leaves garnish
Urundai preparation
1. Soak 1/2 cup toor dal and 1/2 cup kadalai paruppu for 1 hour.
2. In a mixie jar add 3 green chilli, 4 garlic cloves, 1& 1/2 inch ginger, 10 to 12 small onions, 1 big onion, 1/2 tsp pepper, 1/2 fennel seeds, 1 tsp cumin, 1 cardamom, few curry leaves and coriander leaves. Grind to coarse paste.
3. Add 1 cup grated coconut, 1/2 cup pottukadalai, 1/2 tsp garam masala, 1/4 tsp turmeric powder, and salt to grind to paste.
4. Urundai paste is ready.
For kuzhambu preparation
1. In a mixie jar add 1 cup grated coconut, 2 green chilli, 2 garlic cloves, 1/2 tsp garam masala, 1 tsp cumin, 2 tbsp coriander powder and grind to paste.
2. In a kadai add 3 tbsp oil, 1/2 tsp mustard seeds, few curry leaves. Once spluttered add 1 small onion chopped and sauté.
3. Then add 1 chopped tomato, 1/4 turmeric powder and sauté well.
4. Add the grinded paste and required amount of water for the kuzhambu to cook well until raw smell goes off.
5. Add salt to taste and cook for about 10 minutes.
6. After 10 minutes make the urundais and add into kuzhambu and cook well.
7. After another 5 to 7 minutes oil separates. Paruppu urundai kuzhambu is ready. Garnish coriander leaves.
• Paruppu vadai
1. With the same paruppu urundai mixture make small vadais and fry them until golden brown.
• Tomato Rasam
Ingredients
1. Tomato 1 big
2. Tamarind 1 small inch
3. Garlic 2 crushed
4. Coriander leaves few
5. Rock salt to taste
6. Homemade rasam podi 1 tsp
Tempering
1. Oil 1 tsp
2. Mustard seeds 1/2 tsp
3. Curry leaves few
4. Dried chilli 1
Preparation
1. In a mixie add 1 big tomato, tamarind pulp, salt to taste and grind into paste.
2. Then add 2 crushed garlic, 1 tsp homemade rasam podi, few coriander leaves to the tomato puree.
3. In a kadai add 1 tsp oil, 1/2 tsp mustard seeds, 1 dried chilli and few curry leaves and saute .
4. Add the rasam and once starts to boil off the stove immediately.
Tasty rasam is ready.
• Semiya payasam
Ingredients
1. Raw Semiya 2 cups
2. Milk 1/2 litre
3. Sugar 1 cup
4. Ghee 3 tbsp
5. Cardamom powder 1/2 tsp
6. Cashew nuts few
7. Raisins few
Preparation
1. In a pan add 1 tbsp ghee and roast the raw semiya until golden brown.
2. In a pot boil 1/2 litre thick milk.
3. Once boiled add the roasted semiya and mix well and cook the semiya
4. Once semiya cooks well add 1 cup sugar, 1/2 tsp cardamom powder and mix well.
5. In a pan add 2 tbsp ghee and roast cashew nuts until golden brown and raisins until bubbles up.
6. Add it to the semiya and mix well.
7. Serve hot.
Tasty semiya payasam is ready.
