I think if she would have said something in that last scene, he would change his mind, maybe Klaus did it as a sign of his last hope or oputanity, waiting for his love and maybe Klaus would have stayed with Caroline.

That would be out of character for both of them. Klaus has always placed family above all else. He could have allowed Elijah to take his place but he loved him too. He once said that he couldn't go on without Elijah and pretty much later on that he was lost without his brother. He didn't want to die and leave his loved ones but he was at peace knowing that they would live on. Caroline on the other hand has grown up and is a parent herself. She understands putting your kids before yourself and she finally saw the Klaus that she had only seen glimpses of in the past. She could have broken down and told him she loved him but she knew his mind was made up and that it would only cause him pain. In a way the fact thay they didn't go that route makes their connection that much deeper. They don't need to spell out the way they feel about one another because you see it in the way they look at each other, in their mannerisms, in what they say without saying. If anything I think they should have just added that they had kept in touch during the time skip in more ways than teacher-parent meetings.
