Buraindo When I originally played this game on the ps2. I didn't know about the fruit or Lizards. Beat the colossus without the extra health or stamina. It mostely just makes them easier!

honestly the lizards don't really give you that much more stamina, I think it's like a fifth of the colossi's stamina reward. most people recomend just beating the game 4 times to max out wanders stam

Yeah, it is tough to forget Cesare if you've played all or a lot of the ACs. He definitely had a charisma that most other antagonists didn't, and the game makes sure to make him appear quite a lot, unlike his father Rodrigo or ACIV's Torres. I think only Haytham can compare.

I remember when I first fought that dog/bull colossus, I thought it was pretty awesome. A few days later, I watched a friend fight it for their first time. When the back armour was broken, he jumped onto its lower back but still close enough to the sigil and just did a few charge stabs and it died... He didn't get shaked around at all from being in the perfect spot. I remember getting frustrated and explained to him that he accidentally found an exploit that ruined the fight lol.

Plenty of colossi have nontraditional weak points or methods of interaction. What made Dirge's weakness less apparent to me was how most of my time running from it I was not looking behind me, and even if you did once Dirge takes a little while to peak his eyes out.

From the wiki: White-tailed lizards can be found scattered about the Forbidden Lands in Shadow of the Colossus. One can be found at each of the save shrines, while many others can be found in the wild, around certain locations. When Wander kills one, he can consume its tail for a stamina boost. The white-tailed lizards are not to be confused with the regular fully black lizards, whose tails only replenish a small portion of Wander's health and do not raise either max health or max stamina. A Lizard Detection Stone can be unlocked by defeating 8 Colossi in Normal Time Attack, or 10 in Hard. Their agility make them difficult targets, but they are good for getting some practice with Bow & Arrow.

Did they pull that many Colossi because of over-lap? From what I've read, it sounds like most of them were cut for being frustratingly difficult or requiring too huge an arena. There's also the spider, which required unique sword mechanics Ico considered "inelegant" to force in for one fight.
