I love pork belly, but I was serving it just smoked like a brisket with no crisping of the fat. I found it to be a little on the rich side (those bathroom trips were wild). I feel like you still need to be careful, but crispy pork fat would definitely take it to the next level, and also putting it in something like a taco would help as well instead of eating it as slices like I was. You’re the man Malcolm!!!

I just made these. Had a big pork belly and thought I’d try half skin on, half skin off. Skin off is better in my opinion. The skin ended up being chewy. Flavour was amazing. Heated some corn tortillas, fresh coriander, avocado and lime juice 💥 and enjoyed it with a sour beer. 🤤

what I would like to find is a wire rack to replace those thin ones like Malcolm used to put in the sheet pan. I want it made from 1/4 inch wire and stands at least an inch or two above the pan to allow plenty of room for smoke .

Malcomb, I am officially jealous. My Kroger in mid GA does not and never has had "pork belly". Walmart has like tiny strips in certain stores. But no one here believes in "Pork Belly". I am frustrated. I love pork belly, my wife makes it taste sooooo good. But finding fresh local...? I got to drive 2 hrs, and then hope they cut that that day.....Bufords Market, ATL.

I made this and it’s really fantastic. Rich, rich, rich. I made a rough cut cabbage slaw with radish, and just a little bit of apple cider vinegar to cut through that richness. I also made a jalapeño avocado salsa to top it off. My friend Salvador, he’s from Mexico, gave it the thumbs up. I was apprehensive about this cook but it was fairly easy. The Grande Gringo rub is my new everything Mexican rub, good stuff.

Chicharrón is better than burnt ends. Also you have to leave the skin on in order for it to be chicharrón. The crispy skin with the juicy moist meat is the best thing on the planet.
