Started off watching his videos while searching for a good walkthru on how to smoke a turkey and now I turn to Malcoms videos anytime I go to smoke or grill anything basically. His videos are awesome because he is great at explaining each step where it's easy to follow and doesn't have a ton of unnecessary talking and filler. 3veryone of his recipes that I've ever tried, the food turns out phenomenal. I've learned a ton, would be awesome to pick his brain one day if I ever seen him out somewhere.

I was excited to see your rub in my local Walmart neighborhood market and I just wanted to reach out and say it is phenomenal. Most store bought rubs are either too sweet or too salty. @dooder well there isn't a big difference between what you use as a binder because it adds no extra flavour profile, it's only to stick the seasoning to the meat. In Malcolm's case because he used the meat sweats there is no need for him to add a coating of binder over it

Trust me it's the bomb. It starts off a little sweet and you think the flavor profile is done, then it gives you a suttle kick at the end. His AP rub would be easy to do but not his main rub

Call me weird, but there is very little more satisfying that watching a real artisan at their craft. Love just listening to people who are passionate about what they do, and they have the skill and technique to express that passion brilliantly. And let's face it, 5 seconds in, and my immediate thought was, this guy obviously knows what the hell he's doing.... Passionate about his craft. Check Looks the part. Check Sounds the part. if you cut the end off, the new end is going to be dry anyway. Just leave the end on and cook it, and then cut the end off, and it will keep it moist inside, and you have the "extra" snack

Been using the AP rub as a base rub for almost all ribs I smoke since I seen this. No need for a binder as the moisture from the meat sweat does the trick. That BBQ Rub is fantastic as well but I always like to experiment with others as well. So glad I seen this, me and my family have been loving my ribs ever since. Thanks!

Thanks, Malcom! I had to adapt your ribs on the fly, but when I was done, they were as tender tissue paper! The meat just fell off of the bones. Another thing that I learned is that to have ribs for dinner I need to start the grill by 2 in the afternoon! Thanks again, brother! Keep on cooking!! :D

I've kept my ribs in the cryovac package (air tight bag which they come in) in my fridge for a couple weeks which wet ages them, definitely adds to the tenderness. They may have a little sour smell out of the bag, once you rinse them with cold water all that smell disappears, I've done this 20+ times with no issues, works with steaks too. I sure do love ribs and Malcom style will be my next way to cook em.

Very few recipes / channels can you cook something and it comes out as advertised. Ive done so many recipes only to scratch my head and wonder what i did wrong. I have NEVER had that problem with Malcolms videos. Einstein said if you cant explain something simply then you really dont understand it. Malcolm explains everything so simply that he gives you the confidence that you can execute. He's truly a great teacher. I tell everyone about him when they are trying to learn how to bbq.
