+Ivan Earnhart, this is a really good question. The traditional way of cooking Dong Po Rou requires Shaoxing wine because Shaoxing wine is a regional wine from the Zhejiang and Jiangsu, and also because Dong Po Rou is a regional dish from those areas. But of course, if you can't find it in the US. I think you could replace with rice wine. However, without Shaoxing wine, we wouldn't call it Dong Po Rou. We would simply call it Hong Shao Rou, which is a broader term for any slow cook red roasted pork belly dishes.

I had this while visiting China for the first time more than 20 years ago. My father was with me and he hadn't been back for 63 years, since emigrating to the United States. His family was from Guangdong Province and we visited his 102 year old sister there first. Then my relatives took us to 5 different cities as far north as Bejing and over to Shanghai and Shenzhen and Xi'an. When we got back, my Dad tried to make this. Three times. 3rd time was the winner. Difficult to make and get it right. I will try this now. Wish my Dad was still alive to try it.

Hi Cici. I came over from Chris. I think the background music in this video is too loud, respectfully. Chris is louder and easier to hear. It's difficult to hear your narration. The 'tips' are kinda hard to read with the light orange backdrop and the white font. Could just be me. The fake laughing/applause is distracting. My first time with you. Since I've made this dish before. Soak your ties in honey for a couple of hours. They're great to taste when it's done. EDIT: Oh and thumbs up!

My family recipe states the sugar is added to counter the slight sour taste from the oxidised alcohol(aka vinegar) so you shouldn't be able to tell the sweetness, but the meat cubes(we use much smaller cubes, commonly two small bites size) are coated with a sticky reflective liquid, in fact, on a good day, my grandmother can make sure there is no liquid at the bottom of the bowl/plate, all the liquid are condensed as coating on the meat.

They had 2 quickies in the kitchen (30 minutes turning over the pork) and a long one in the bedroom (one and half in the steamer). And that pork became so soft and delicious.

+007MrYang Every meal that is cooked for 3 or more hours is the best. Especially since you eat it once in a blue moon due to time constraints. But those dishes are not actually hard to make, it's just that you have to start them up hours before you plan on eating. In Serbia we have some meals that take around 3 days to make, so 3 hours is really fast in a way :)

You can do it in less than 3 hours (cooking time) if you put the wine with the pork first (for 3 hours, I know, just do it early in the morning), and do the rest just like the recipe but flip it for about 20 minutes.

Traditionally, Dong Po Rou uses only Shaoxing wine. If you substitute with red wine or other wine, you could call it red wine braised pork belly. It wouldn't be Doing Po Rou. It will still be very delicious. It’s just a different dish. ☺️
