Dong Po Rou (Dongpo pork) is a well known dish from the Jiangsu & Zhejiang provinces. It’s made with pork belly. Half fat, and half lean meat. When you eat it, it’s instantly melt in your mouth, and with a taste of shaoxing wine. According to the legend, this dish is created by Su Dong Po, a Song Dynasty well known writer.
Origins
Legend has it that during Su Dongpo's life of poverty during his banishment to Hangzhou, he improved on the traditional process. He first braised the pork, added huangjiu (yellow wine) to make red-braised pork, then slowly stewed it on low heat. In their scholarly work Chinese Gastronomy, Lin Hsiang Ju and Lin Tsuifeng give the recipe "The Fragrance of Pork: Tungpo Pork", and remark that the "square of fat is named after Su Tungpo, the poet, for unknown reasons. Perhaps it is just because he would have liked it."
Dongpo Pork experienced three phases of popularity, from first appearance to mainstream appreciation. The history of the dish is said to parallel the experiences of Su Dongpo: from Xuzhou, a northern city of Jiangsu province, where Dongpo pork first appeared under the name of Huizeng pork; to Huangzhou, today Huanggang of Hubei province, where Su Dongpo finalized the method and recipe; and, finally, to Hangzhou, where Dongpo pork was officially named and became widely known across China.

+Ivan Earnhart, this is a really good question. The traditional way of cooking Dong Po Rou requires Shaoxing wine because Shaoxing wine is a regional wine from the Zhejiang and Jiangsu, and also because Dong Po Rou is a regional dish from those areas. But of course, if you can't find it in the US. I think you could replace with rice wine. However, without Shaoxing wine, we wouldn't call it Dong Po Rou. We would simply call it Hong Shao Rou, which is a broader term for any slow cook red roasted pork belly dishes.

I had this while visiting China for the first time more than 20 years ago. My father was with me and he hadn't been back for 63 years, since emigrating to the United States. His family was from Guangdong Province and we visited his 102 year old sister there first. Then my relatives took us to 5 different cities as far north as Bejing and over to Shanghai and Shenzhen and Xi'an. When we got back, my Dad tried to make this. Three times. 3rd time was the winner. Difficult to make and get it right. I will try this now. Wish my Dad was still alive to try it.

Loved the video, though would remove the audience laughing stock sounds, feels too forced. Great recipe. The pork is so well prepared i bet even a muslim would deem it clean enough to eat.

My family recipe states the sugar is added to counter the slight sour taste from the oxidised alcohol(aka vinegar) so you shouldn't be able to tell the sweetness, but the meat cubes(we use much smaller cubes, commonly two small bites size) are coated with a sticky reflective liquid, in fact, on a good day, my grandmother can make sure there is no liquid at the bottom of the bowl/plate, all the liquid are condensed as coating on the meat.

This dish is the most famous dish of Cantonese people and the creator name is Su Shi, also known as Su Tungpo, was a Chinese writer, poet, painter, calligrapher, pharmacologist, gastronome, and a statesman of the Song dynasty. The name of the dish is Su Tungpo slow cook pork belly. Best dish to eat during winter time especially with white rice :P

Hi Cici. I came over from Chris. I think the background music in this video is too loud, respectfully. Chris is louder and easier to hear. It's difficult to hear your narration. The 'tips' are kinda hard to read with the light orange backdrop and the white font. Could just be me. The fake laughing/applause is distracting. My first time with you. Since I've made this dish before. Soak your ties in honey for a couple of hours. They're great to taste when it's done. EDIT: Oh and thumbs up!

I learnt to do this many years ago but without any sugar and using several anise stars (八角) 红烧肉/hong shao rou uses sugar which is lightly caramelised first, and only one or no anise stars depending on the chef. But I'm sure there are lots of variations around - just to me its not Dong Po Rou /东坡肉 unless it has that anis flavour. And for those who don't like aniseed, it doesn't have that sharp flavour after being so diluted and cooked for so long, but it is a unique, genuine Chinese flavour.

+007MrYang Every meal that is cooked for 3 or more hours is the best. Especially since you eat it once in a blue moon due to time constraints. But those dishes are not actually hard to make, it's just that you have to start them up hours before you plan on eating. In Serbia we have some meals that take around 3 days to make, so 3 hours is really fast in a way :)

You can do it in less than 3 hours (cooking time) if you put the wine with the pork first (for 3 hours, I know, just do it early in the morning), and do the rest just like the recipe but flip it for about 20 minutes.

This video is depressing - because it makes me want to eat this non-kosher dish. There is a dish I believe called Buddha/Monk Jumps Over the Wall. This dish could be Muslim/Jew/Vegetarian jumps over the wall.

Excellent! Just personally like to cook a bigger portion, so delicious & cannot get enough! Thanks, Ci Ci for the yummy receipe. I couldn't find a big pot to steam, so i just cook it as 2.5 hrs in total in the ceramic pot.
