First time trying a steak - turned out very nice indeed.
Amazed that you can cook a steak and leave it in the oven while you cook the rest of the meal

I received my APO 2 days ago and made the roasted broccoli, toasted bagels and I am 12 hours into a chuck roast. I read the minimum temperature for slow cooking proteins is 125F to kill all the bacteria. The probe temp came up to 130F within 2 hours of cooking the roast. Looking forward to searing the meat as you have done!

Thanks for the upload! Just got my Anova and had a slight sense of intimidation, so seeing how truly easy it is to use from someone else really helped. Time to break this thing in!

Very nice. Can you sear it before cooking it in the oven ?

You can if you want, but it will come out wet and soggy after sous vide, so you may have to sear it again.

I'm looking at buying this Anova precision oven. How do you really like it? I have looked into so many steam/ convection ovens I want to make sure I am making the right choice I can't afford to make a mistake. Thanks.

We have had some really good experiences with it and no problems at all. Some other have had issues, but Anova has been really good at exchanging them. The thing to remember is that it takes a little getting used to and some experimenting. We use this oven more than anything else in our kitchen now and love it.

I have a new in the box Anova precision oven for sale I returned the first one for a bad fan bearing but have decided that the features of the oven don't match my needs. I have it listed on the Stillwater Oklahoma craigslist. I won't include a link here. If you search Anova both of my ads should show up.

That's a De Buyer Carbon Steel fry pan. They take a good seasoning and we can use them in the wood fired pizza oven, although the handle is pretty long. Check them out here: amzn.to/37ovsEA

Wouldn't it be better to wear first and then finish in the oven? That way we keep in the juice

No. The idea that searing 'seals in the juices' is a kitchen myth. Hence, reverse searing (cook first, sear at end).

it’s a bit overkill and a waste of energy to cook perfectly a steak… you’d get the same result with the frying pan and a thermometer .
