No need to marinate! Mushroom & Onion Chicken Tofu Stew 香菇洋葱豆腐鸡 Chinese Quick Braised Chicken Recipe
Serves 4 pax
INGREDIENT LIST

4 pieces fried Shiitake mushrooms, rehydrated and sliced into strips
1/2 yellow onion, cut into wedges
1/2 red onion, cut into wedges
2 stalks of spring onions
250g (8.81 oz) boneless chicken, cut into bite-sized pieces
10g (0.35 oz) young ginger, chopped
1 tbsp black bean paste
1/2 tbsp oyster sauce
1 tsp premium dark soy sauce
1/2 tsp sugar
A few dashes of white pepper
250ml (8.45 fl oz) water
300g (10.6 oz) soft tofu, cut into cubes
1/3 tsp salt
Some cornstarch solution
1 tsp sesame oil

Made this for dinner last night and my family loved it. I used chicken thighs, though. I ran out of black bean paste so I substituted hoisin sauce and eliminated the sugar. I also used firm tofu instead of soft. It tastes great!

Can firm tofu be used instead of the soft tofu? While I love tofu, soft tofu is a textural issue.

You put water in the pan, it would prob make it soften. Maybe you could do a skin cracker to put it after cooking or smth

Agree. I'm a professional chef and always keep the skin on for flavor and texture. Fat gives any meat it's flavor. Do we remove the fat from a beef steak? Of course not.
