I was looking for a simple recipe for a quick cook and happened to find this recipe. Yes, you are right, it is our mum's simple and easy comfort dish. I decided to try your version and when I tasted the finished product, I did a jig and said out loud, "Mr Spice and Pans, your version is sooooh good!" I don't know why I did not say Mr Roland. I made this today and was fantastic. Really delicious. My variation was in the marinade, i used honey instead sugar, and used only watery kikoman soyasauce as i didnt have dark soya sauce . I also used chicken breast and some bones, not wings as well as rice wine from Borneo. Yumms

OMG! I tried this minus the onion leaves as I didn't have them. Didn't have the wine either. However, it turned out to be super duper licious. Even my family who have more of Indian palate loved it. Thank you so much for this simple yet fabulous recipe.

This was delicious. Just so you know I used mirin as I didn't have the Shaoxing wine. Mirin works just fine. Thank you for sharing another chicken recipe that's so easy to prepare and delicious too. 🙏

I did everything in video. My wings was difficult to get as brazed because I had a few more than recommended. I did get some colour however at the end was more brown than red. Delicious but where could I be going wrong ?

Tried it and it is delicious. My wife claimed that she is not a fun of chicken wings, but this way she is asking for more. I would like to ask you about other recipes if possible. We have nice Chinese restaurant in Zagreb (Croatia) which has been closed lately. We were regularly ordered zu con, and huo tian chicken. Since they have closed i am trying to find a recipe for this and couldn't find it. Can you help?

Hi, at 5:14 when you are reducing the liquid, roughly how long does that take? And do you need to constantly stir / shake it around during that process?

Hi Cheng Jun. Sorry for our late reply. You don’t have to constantly toss the chicken around when you’re reducing the liquid but do stir them every now and then so that the chicken doesn’t stick to the pan. When reducing liquid, don’t put the lid on as you want the liquid to evaporate. It would take about 10 mins or so. Yes please turn chicken around occasionally so that both sides of the chicken is equally covered by the sauce nicely. Hope this helps. Happy cooking!

Hi Chef, thank you very much for the recipe. Tried many many of your recipe without failed :). But I always encounter one problem, too salty. I guessed may be due to the dark soy sauce that I am using. May I know which brand of premium soy sauce you will recommend?

Hi Pei Xuan. Thank you so much for using my recipe. I’m very happy to know that your hubby enjoyed this. The brand of our premium dark soy sauce is actually Kwong Cheong Thye. Go for their chicken rice soy sauce and use it as a premium dark soy sauce. Very very good. Kwong Cheong Thye can be purchased from all supermarkets in Singapore as well as RedMart. Hope this helps. We’re using a phone to film our videos - low production and we did notice that sometimes when the frying sound gets too high, Roland’s voice becomes muted. We’ll try to find a solution around it. Meanwhile, gotta strain your ears a little. So sorry for it.
