I was all excited to make “brown butter pumpkin cookies” until I realized I had no butter 😑 so I substituted shortening… got them on the oven and they still looked “wet” after baking. Realized I forgot all the flour! So I scooped them in a bowl, added flour, and baked again. They were edible (my daughter loved them) but I want to try another pumpkin recipe this week. Hopefully I won’t mess up in this one 😂

Looks delicious! I like to mix all of the dry ingredients together, then add them to the wet ingredients. This ensures that they are evenly mixed.

Enjoyed watching your video and your pumpkin bars look so delectable. I was going to make a pumpkin cake later and add chocolate chips to the batter. You are totally correct about adding oil to the bars to keep them moist for a long time. I think you are a natural born cook/baker and you put your heart into whatever you are preparing. I like to roast my own pumpkin to make pumpkin puree. I'll even turn a carving pumpkin into puree and think they have plenty of pumpkin flavor. I make a pumpkin "bread" (more like cake) that I'll roast and puree for. I'll drain the puree in cheesecloth (saving the liquid) making a nice, thick puree. I'll then turn around and use the liquid I got out of the puree as the liquid in the bread. Eaten with cream cheese or butter is heavenly. Thinking about making a maple cream cheese to go with it. That sounds incredibly tasty.

I do like it, but it isn't quite as powerful as one that is plugged in. So if you need to use it for something that's harder to mix, it might not mix as well. But for this frosting, it worked really well!

You need to mix the dry ingredients together first before you add to the wet. It blends better.

Kaleb, I wish you would mention alternative "healthy" neutral oils such avocado or even light olive oil. Seed oils are so detrimental and even some M.D.s are calling them out as toxic. Of course, they say the same about sugar but I guess you have to minimize the damage somewhere if you're going to consume sweets at all. 😊 Btw, all your recipes look delicious so I'll try substituting and see what the results are flavor wise.

@@KendraLynch10 If by "diet" you mean calorie restriction or weight-loss then you've entirely missed the point. I didn't say anything about that. Seed oils are extracted with Hexane which is a petroleum based solvent and something that most people would steer clear of if they were aware. IMO there are far better options to put in a yummy dessert but everyone will do as they like.

I would replace the oil with olive oil but I’m also wondering if apple sauce or Greek yogurt would be a good alternative and avoid the oil completely. I would replace the white sugar with monk fruit and maybe omit the brown sugar completely.

I agree! I don’t use canola even if it’s organic. Someone suggested coconut oil, which would probably work great in these. The one I get at Trader Joe’s doesn’t taste like coconut at all! For those who don’t know why- seed oils are highly inflammatory, so they’re really bad for you, and if they aren’t organic they are usually GMO.

Maybe try canned sweet potatoes and puree them...although I think most are in a sweet syrup so maybe just cook the potatoes and puree. Or I guess you could decrease the sugar to compensate for the canned ones. Drain the syrup off, of course.

I’m surprised people are still recommending and using canola oil in recipes…? Avocado oil would be a healthier oil to use in baking.
