I think hes roughly 12-ish feet by default. But we’ve seen various methods by which he can grow. In many of the 2D games Kamek uses his magic to supersize bowser and in galaxy 2 we see that eating power stars causes him to grow.

Allow me to answer that! The guys at Nintendo told me since little kids would be playing the game they didn't want Bowser to sound "too" mean. So I layered in what I considered to be my Santa Claus voice. (Plus, I don't have a naturally deep voice to begin with....)
