LEMON LOAF CAKE
INGREDIENTS FOR THE LEMON LOAF CAKE:
• ½ Cup Curd
• 2 cups Maida (all-purpose flour)
• ½ tsp baking powder
• ½ tsp baking soda
• 1 tsp Lemon zest
• 1 tbsp Lemon juice
• ½ cup Oil (vegetable or canola oil)
• 1 tsp Vanilla essence
• 1 cup Icing Sugar
• ½ cup Milk
• 2 drops yellow food colour (optional)
FOR THE GLAZE:
• 1 cup Icing sugar
• 2 tbsp Milk
• Lemon zest (for garnish)
INSTRUCTIONS FOR THE CAKE:
• Preheat your oven to 350°F (175°C).
• Grease a loaf pan with oil or line it with parchment paper.
• In a mixing bowl, combine the curd and oil. Mix thoroughly until well blended.
• Add the vanilla essence and lemon zest to the mixture. Mix well.
• Add the sugar and mix until it is fully incorporated.
• Sift the maida (all-purpose flour), baking powder, and baking soda together.
• Gradually add the sifted dry ingredients to the wet mixture, mixing well to combine.
• Add the milk to the batter and mix until smooth.
• Finally, add the lemon juice and mix until everything is well combined.
• If using, add 2 drops of yellow food colour to enhance the lemony appearance of the cake.
• Pour the batter into the prepared loaf pan.
• Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the centre comes out clean.
• Once baked, let the cake cool in the pan for about 10 minutes, then transfer it to a plate to cool completely.
PREPARE THE GLAZE:
• In a small bowl, mix the icing sugar and milk until smooth. Adjust the consistency by adding more milk if necessary. The glaze should be pourable but not too runny.
GLAZE THE CAKE:
• Drizzle the glaze over the cooled cake.
• Garnish with additional lemon zest for a fresh, citrusy touch.
