Wolfie, I am a recent subscriber and am enjoying watching your content especially the ones that are focused on hardscrabble menus. My 3 brothers and I were born into abject poverty here in Virginia and our mother made many of the meals you have featured. When you go there it fills me with warm memories. I now, when I'm well, cook many of her recipes in her memory as well I like doing many mash-ups myself. I have no fear when it comes to these style of dishes. Coriander leaves are a substitute for the real thing, pápalo (Porophyllum ruderale). Some specialty grocers sell it, and it smells a bit like detergent. But coriander is easier to grow (although if you grow it from seed, certain varieties tend not to bloom readily and produce more of those leaves known as cilantro).

@@pablodelsegundo9502 almost every taco truck I've ever eaten at had it all homestyle used to eat 3 or 4 tamales everyday for lunch bc they are such a pain in the ass to make at home and from the truck it was like my mom spent a day and a half making them right there,, especially with verde and creama

That looks fantastic. I would wolf down ten of those in five minutes. I sometimes make carnitas myself and it's pork shoulder (neck works fantastically well also) slow cooked in its own lard and juices, with spices and orange and onions. It's then shredded and fried crispy. It's a bit involved but you can keep reusing the lard and the flavor builds and builds. You should give it a try sometime.

If you’re using store bought tortillas you can lightly fry them in oil for an enhanced flavor. I use corn oil (mazola) until slightly brown on both sides. I prefer using the yellow corn tortillas but you can do it with the white ones if you like

Latino here. A great way to eat left over carnitas. Is to put them in a food processor along with jalapeño peppers, tomatoes, and onions. Salt pepper and garlic. Process until it's all blended and mashed together. Put the mixture into a corn tortilla and deep fry until golden brown. Let cool and enjoy. Amazing amazing tasting.

I made this after watching. Substituted ground chipolte for the cayenne. Overdid the chipolte but the rest was spot on. My dog stole half of it after pulled apart. He almost got unalived for doing that.

There is absolutely NO reason why authetntic mexican food can't be available everywhere in the US. It's easy to make, the spices and ingredients are easily attainable and available, recipes and ways of making it are easily learned. I have no doubts in my mind that Larry's version of these tacos are better than the places,

IDK about that sugar and cinnamon. Maybe some Mexicans do it that way, but I've never seen that. It's also usually braised, but I have no problem with it being smoked.

fill a bottle up with orange juice or pineapple juice and spritz the butt while its smoking. Carnitas uses orange and al pastor uses pineapple. Not 'authentic' because youre smoking it, but it will taste amazing trust me! though to be honest, the best home made carnitas Ive ever had was just copying chef johns oven/broiler carnitas. A home made salsa to add on top is really easy and delicious too.

Thats not true about Chineese restaurants here in NY at all, the best spots have the whole family working in it, living above it, and the kids are doing homework at one of the tables. The only thing you could have done to make the pork a little better would be to add some lime and orange juice to the pork when it was wrapped, and pickled onion goes perfectly with carnitas as well
