To me, Bas releif is basically a 2D detail. So it has detail that stands out from the cake, but only on the front.

Can you tell me how to get rid of the sweating fondant and the melting ganache, underneath?

If your ganache is melting, you might want to make it thicker to begin with. What ratio are you using? Mt fondant sweater too, but it will dry after a while. I prefer a residential fridge over commercial because they are less humid.
