SURAN KI SABJI
Preparation time 15 minutes
Cooking time 30-35 minutes
Serving 4
Ingredients
For Frying Yam
500 gm Yam (suran) , जमाई कंद
Emami Healthy and Tasty Mustard Oil for frying , तलने के लिए इमामी हेल्दी एंड टेस्टी मस्टर्ड ऑयल
For Tempering
2 tbsp Emami Healthy and Tasty Mustard Oil , इमामी हेल्दी एंड टेस्टी मस्टर्ड ऑयल
5-6 Black pepper cons , काली मिर्च के दाने
2 Green cardamom , हरी इलायची
1-2 Cloves , लौंग
1 tsp Cumin seeds , जीरा
2 fresh Green chillies, chopped , हरी मिर्च
1 inch Ginger, chopped , अदरक
½ tsp Turmeric powder , हल्दी पाउडर
1 tsp Degi red chilli powder , देगी लाल मिर्च पाउडर
1 tsp Coriander powder , धनिया पाउडर
¼ tsp Asafoetida , हींग
1 cup Curd , दही
Fried Yam , तला हुआ जमाई कंद
Salt to taste , नमक स्वादानुसार
Water , पानी
½ cup frozen / fresh Green peas , हरे मटर
2 tbsp Coriander leaves, chopped , धनिया पता
½ Lemon juice , नींबू को रेस
Process
For Frying yam
Heat mustard oil in a kadai, add yam cubes and fry on medium flame.
Remove in an absorbent paper and keep it aside. For further use.
Remove the excess oil.
For Tempering
In the same kadai, heat mustard oil, add black pepper cons, green cardamom, cloves, cumin seeds let it splutter.
Add ginger, green chilli and saute it.
Add turmeric powder, degi red chilli powder, coriander powder, asafoetida and curd mix it well.
Add fried yam, salt to taste, water and mix everything well.
Cover it with the lid and cook for 5-10 minutes.
Add green peas, coriander leaves and lemon juice mix it well.
Garnish it with coriander sprig

Yes suran is a compulsory in our households in diwali (कायस्थ represent ✋🏻). My mom makes it in sarso ka masala with tomatoes. We even cook it this way sometimes. Ek meri aunty suran ka chokha banati hai, uska to koi jawab nahi, aalu bhi fail hai uske samne. Waise hum bhi saal me ek baar hi khaate hai 😅 Ab meri mom sare family groups me share karengi 😃. Maza aa gaya. (PS: Humare Yaha alag hi story chalti hai... agar nahi banaya to agle janam me pati chachundar ban jayega 😝😂)

Thank you Chef for giving this traditional aspect about Suran cooked on deepavali. I never knew about it. This is how we learn about the diverse cultures and traditions of our country. At home Suran is one of our favourite vegetables and I am going to try this out. But I'll saute fry it until crisp because we don't prefer fried food. The dish you cooked looks yum and I was drooling over it. 😋. Thank you for the recipe. Happy Deepavali to you and your family and your entire team.

We make jamikand with palak or with tamatar or with green peas.. I cut it in medium size pieces then boil them in water with little salt than fry .. take oil put heeng and jeera , put green peas, adrak hari mirch then put fried zamikand, then put salt, red chilli powder, dhaniya powder, sanuf powder and we have our own special masala called “Badiya”.. add water cook till zamikand become tender.. add little lemon.. garnish with corriander

In malwan we cooked yam with dried prawns (called Sukhat), onion, garlic, coconut n malwani masala .. tastes yummy..

I'm a bengali . My nani used to make it like bharta. Boil the yums & smash it. Add oil on pan add Nigella seeds & dry chilli add the smash yum & salt & sugar. Today I try this recipe for first time. It comes out really well. My mamu likes it

Thank you so much to bring back the tradition, definately a must try recepie. However we Bengalies also eat it with hot rice by simply boiling it, then smash it, add salt, and paste of mustard, grated coconut and green chilli. Add little bit of raw mustard oil and mix the entire thing with smashed elephant foot. This is also very tasty.

We have a different version of story in Ayodhya as sita mata came back to Ayodhya in Deepawali day. People came to know that she loved to have Suran/ Jimmikand as it was easily available in Jungle area so people started making it as part of tradition In Ayodhya. Earlier chokha was made with enough khatai now i make it every year by boiling it once and then good tadka with lemon juice. Even my kids enjoy it for its tangy flavour. It is good for winter season too👌

Bengali log bohut pasand karte hai,,, Bangal me yam ko ol bolta hai,, "Ol Chingri (prawn) bohut famous food,, Yam ko 5mnts boil karne ke baad fry karne se gale me nahi lagta,, Thank you Ranveer,,very nice,, Young generation ke liye bohut accha hai yeh vedio,,

I just cooked suran ki sabzi with other veggies, dal prantha , Bengali Mithai, And Rajma as per my husbands and my family tradition. He is Bihari and I am Punjabi :) . Happy Diwali Ranveer.

Hi Ranveer, I am married to a kayasth, saxena and I have never ever seen them making. Infact I am an odiya and kshtriya by cast , we make jimmikand very often. My mom prepares some awsome traditional recipes 😋

Waah RB, jame kabhi naji pata ki suran north India me Diwali me banta he, hum specially Navratri ke fasting ma dahi ke saath kathe he aur arhar ki daal me ek tukda boil karne me daal dete he. Yeh recipe me yel ke badle ghee use karke aur mutter air haldi nahi dalenge to farali subzi ban jauegi..Abhi Navratri me hi bana lenge

@@dj-ux1jr daal became little thick and texture become smooth. When there is a special occasions,jimikand is added while boiling along with peanut and dry date . Not on regular basis.

Fasting ki subzi Haath me namak aur oil lage ke jimi kand chilo,badme usko cooker me ek bartan me steam karlo. Pani me bhi direct rakh sakte ho par kabhi kabhi woh bohol soft ho jata he. Badme, pan me peanut oil or jo bji oil aap fasting me khate ho woh lo ek bada chammach,oil garam ho tab usme thodi mugfali dal ke usko dhimi aanch me bhuno, jab lage ke mungfali karari jo gayi tab usme jeera, kati huvi hari mirch, sukhi mirch aur kaddi pata dal ke tadke to bhino. Badme usme jimikand kaddu kiya adrak aur sendha namak daal ke pachi tarah se mix karo. Uskme kali mircha powder bhi daal sakte ho aur bark kata huva dhania. Gujrati daal,jab large quantity me koe tyohar me banani jo tab hum mungfali, jimmikand, sukhi khajur( kharek-uska hindi naam nahi pata woh dalte he,usse daal ka zayka bahot hi badiya ho jata he.

This is khamba alu in odia,olua is another,the big in round shape,in english this is yam,olua is elephant foot.

This z not khamba aloo. It z what Nadra has said Olu. Called suran or yam. Khamba aloo is d desi aloo nd it z a different root tuber.

🤔Koi Mujhe batayega Assamese mein Suran Matlab? As a Muslim sometimes I feel we don't have that much culture that my fellow Hindu friends have ! Every festival has different foods and different reasons to eat them. I just love that💕❤.Edit : Suran means কচু (kosu) 😍. I love that.
