As far as I'm aware, abstaining from sex doesn't mean that you can't do anything sexual (plenty of other things you can do to see if you have sexual chemistry with someone), also I think they've been together for quite a while so you'd have a pretty good idea of who you're moving in with based on how they act in their family homes and Rachel has lived out of home for several years
