It helps that the background was real (instead of green screen) and they heavily used real practical effects intead of relying solely on CGI. Some of the closeup shots of the bugs were done with real life models and animatronics. Jurassic Park also used a combination of CGI + real models/animatronics (IIRC, they made animatronic models of Velociraptors and most of the T-Rex).

But in the beginning of the movie we see someone from MI missing both his legs, and the LT didn't get a mechanical arm until he was back in action, so I'm guessing he just didn't want to go through the rest of his life missing the majority of his limbs. There is also the possibility that the femoral arties pulled back too far to tournequit or possibly even clamp since the amputations occurred very close to the waist.

They have energy weapons in the extended lore but they were expensive and not as reliable as the Morita Smart Rifles. Keep in mind in the books and other media the troopers are supposed to have visors to assist in targeting but they were dumped for the movies because the actor' s breathing kept on fogging them up the screen.
