Yes that’s their kind of knife. When I first saw it I thought they are so poor they have to use sharpen rulers😂 But no, that’s just what they use

In India people do actually use that type of knife for cutting vegetables,its a bit different . It is specially made for doing that not for cutting through metal

@ its because there is least amout of people working on street food that actually have knowledge about culnary professionally so they use whatever is cheap n comfortable its not actually metter of poorness but someone working can afford knives for sure.
