This is honestly one of the scarier minecraft let's plays I've seen. The harshness of the survival combined with the extra noises really put me on edge. It really puts you in the mindset of someone trying to survive an inhospitable environment. It scratches a particular minecraft video itch for me that not a lot of other ones have.

I think a good strategy for food could've been fishing using a fishing rod, since you only need string and sticks + there's a large pool of water just outside the mineshaft and you could just place down a campfire and fish for a while, then cook the fish on a campfire

Something that would help keep you warm is something called a boiler. It's also from Cold Sweat, and allows you to heat up pouches of water. It takes magma blocks or lava buckets as fuel, and you can keep multiple in your inventory. I believe they only return to neutral temp/work when they're in your hotbar, though. You can also use them while holding them to douse yourself in the hot water. Quick little bandaid solution if you're about to start freezing!
