A quick tip for preparing eggplant: Eggplant is filled with water that makes breaded dishes a bit too soggy. You can get rid of the water by slicing it as you did but then lightly salting it, put it in a strainer (or a bowl with aluminum foil over it, holes poked in the foil), and letting the salt leech out all the excess water! It really makes fried/baked breaded eggplant much better! Anyway, great video and I look forward to the next one!

a small fun fact about american highways that not many people know. the highways were not built for use by the citizens, they were all initially built for use by the military, for the same reason this one was.

My father was actually stationed in the Aleutian Islands during WW II, first on Kodiak Island, and then on Adak Island. He was there for 3 years. i love that you researched the history of the Alaskan Highway.

Ryan well done! Thank you for introducing such an important part of the history to me! My dad lived in America his whole life and I’ve never heard of the history of this highway before! Lol yes as a trucker myself they do usually leave the trucks running for heat or a/c. Me personally I can’t sleep with all that noise so I usually turn my truck off after a while….. I’m a HUGE FAN of chicken parm, meatball & sausage parm but ironically I’ve never had eggplant. Probably because it has the word egg in it and I hate eggs so I assume I would hate that too (even tho it’s vegetable or fruit since it has seeds in it)

Ryan, I was born in 1959 in Miami and my father was in the U.S. Air Force at nearby Homestead AFB. When I was 4 years old my dad received orders for Eielson AFB Fairbanks. He drove us in a 1952 Ford (me, my younger brother and my mother) all the way up the east coast with stops to visit with family along the way and then on to Niagara Falls. Then he drove us across the northern states until we hit the AL-CAN highway and then drove that until we arrived in Fairbanks, I still remember about 50 percent of the trip! The AL-CAN was not even paved by then and was very narrow, in fact, a south bound 18-Wheeler drove dangerously close enough to us to shear off the back door left-hand passenger door handle or our car and I've never forgotten it! We loved Fairbanks and were there for 3.5 years, I truly believe it was the happiest period of time for my parents and for my family, I had two siblings born there.

We drove it when it was all dirt with some gravel in areas and 300 miles longer than it is now. 1968 six of us and dog camped from Kansas to AL and back. Dawson Creek was about 300 people and that was your last real gas station. You had to fill up on everything to last the trip. On the road it was just a hermit who lived in a shack with one gas pump and you had enough gas to get to the next guy. The dirt road turned to slippery mud when it rained and we often had to stop for extended periods of time waiting for things like bears to meander off as the wildlife used the road more than people. Periodically there would be an old wooden sign that said water and an arrow that led you down a path to a small river or running creek to fill up. No radio, no contact. If you broke down you could be there for days before another car came along. Everything went into Alaska by boat or plane back then. To say it was primitive would be an understatement so there was lots of planning to drive that road.

I didn't realize the Alaska highway was paved now in its entirety. Used to ride with my dad from Vanderhoof to Dawson Creek to deliver farm equipment back in the '70s

@@Ryantwomeyy Thanks for the clarification. My wife is at the moment west of Ft Nelson out in the Park somewhere cooking for a Ranch. I recently came from Vhoof through the ice fields home to Montana about the same time you came up. I do the Jasper to Lake Louise to Radium Hot Springs in the middle of the night, it's much quicker without the tourist travel on the roads. Safe travels.

My fun fact about the Alaskan highway is when we made trips up and down it in the early mid 50s it was called the ALCAN highway. I was born in Alaska when it was a territory. I am 69 now, and have never had a birth certificate. I have a registration of birth in the territory of Alaska, with both parents being American citizens. That’s what my birth certificate says fun fact, born in 1953.

Love this Ryan! Very impressed with your genuine driving ad lib regarding the construction project. That was actually the US Army Corps Of Engineers and we use their constantly updated practical standards on EVERY construction project to this very day. Everywhere. I myself was a USMC Combat Engineer in the 70's and transitioned over into civilian life as we all do. (Heavy equipment/trucking) It's in the blood maybe lol. The eggplant dish was the kicker! Wow!!! Awesome!!! Yep good awareness regarding the overnight truckers. Typically they'll park far away from overnighters but you may (yikes!!??) encounter the atypical lol as in this scene. Love the new skins & fresh oil change and we're all excited for this scary last leg of your 'coast to coast'; always fun these long trips; unexpected bugaboos! You're always anticipating such 'n' such circumstance! Cheers!

17:59 this is a pet peeve of mine. I'll be sitting in my car in the park and someone will park by me and leave their engine on. Sometimes it will be perfect weather out too and they'll sit there with their windows up and just scroll mindlessly and waste gas. I usually wind up moving.

Ryan, the last person was right about salting and draining. I am half Sicilian. You should dip in egg and bread crumb. Fry in olive oil then bake with sauce and cheese.

I’m still watching the video, however I had to come here and comment. This is the most interesting video that I’ve seen about the Alaskan highway. I’ve seen a lot of RVers take their trips from the US through Canada and into Alaska. I’ve never had this much detail about the highway. This tells me a lot about who you are and how much you care about your channel, and how much you enjoy learning the backstory and knowing about the things that you’re doing. I can’t wait to continue to watch and listen and learn more! Keep up the great work!

I think you will find highway 50 has a lot less traffic then the Alcan highway. Enjoy your trip, it’s a beautiful place.

If you don’t want to drive back, you can take a Ferry that stops off several places on the way back to the lower 48’s. Large ferry that has cars and RV on it and tent camping on the upper deck. 🇺🇸👍🏻☕️

Way to go Ryan, much to be said for the stick-to-it·ive·ness of your series and seeing this through. So often KZbinrs are quick to hype new episode ideas to garner attention and excitement, but never deliver or putter out after a single post. You've remained true to your word despite the setbacks. Where many would quit or pivot, you've persevered. You're a shining light on this platform and your parents are to be commended, as well.

When I cook eggplants I put with salt and let rest for 5 - 10 minutes it gets rid of the bitter taste

Awesome video...I have really never seen what the Alaska Highway looks like. To my surprise it looks well maintained. I was expecting something that looked like the old Route 66 back in the lower 48. Egg Plant Parmesan is one of my favorites.
