I really like that he introduces his fish handler/provider to his customers to show that he really cares about the quality of food he wants to bring to the customer's table.

I think it's always been the affluent (it's Beverly Hills, and this sushi must cost lots) ladies (esp. if they're japanese, more likely to work minimally/have more free time compared to their typically male counter parts) who have enjoyed and experienced this kind of "hipster" (I don't mean that in a derogatory way) and kinda insubstantial fine dining.

He is grateful because this man opened the doors to his success as a fish supplier. Japanese culture is based on trust as are many Asian cultures, the only way to do business with someone is to be referred by a trusted party. As for the all of the people at the sushi bar being women, he probably had to set this up with people who were good with getting filmed, they could be a group of friends, who knows...

That's why quite a few of these episodes are done later in the afternoon/evening as you tend to have more of both sexes being free to enjoy meals. Where as this episode was done around lunch service and there are groups of girls out there that enjoy lunches during the week together.

They bash the fishes heads in, killing them. Then they do the neuron blocker. Its in the spine and nerves so of course the body jumps and squirms. Does the description of what neuron blocker not tell you enough ?, it tricks the body/meat into thinking its not dead. Havent you seen videos of octopus legs moving when you pour soya sauce on it ? Theres even videos of beheaded and gutted fishes still moving and jumping just go youtube it.

I've been to this restaurant this past week and he was not the sushi chef but the host the sushi chef's name is teddy yamashita. the food was quite expensive but it was worth the experience. can't beat sushi from Hawaii.

I'm sure this novelty appeals to some people but at the end of the day I'm about the food. Aesthetics are appreciated but it's really not why I got to a restaurant. The last thing I need to add to the price of extremely fresh/imported sushi are these gimmicks. I do appreciate the quality of fish and care to the food on a taste level. My mentality is probably why Chinese food is my favorite.

does the fog underneath the cup actually do anything or is it just for looks. Because i'm wondering if he actually somehow was able to capture smoke in the cup and place it around the fish, would it give it a smokey flavor?

I think that's mainly for presentation and entertainment purposes since the salmon has already been smoked for some time in the smoker that was shown, I believe. I could be wrong but I doubt the fish would really absorb any smoke flavor in the short time from plating to eating.

People complaint about "too much flower and decoration than a food" didn't know that Omakase Sushi dishes are not just a "food you had to eat" but also japanese art and culture on it. if you just wanna eat until full ? don't go to japanese sushi restaurant, go to mcdonald instead.

Some people are turned off by the texture. Both my mother and niece didn't like sushi when they 1st tried it, but i took the time to lead them into it slowly by starting off with the most basic "California Rolls". They don't have raw fish in them and its just to allow their tongues to get familiar with the texture. I then let them try "Shrimp Tempura, followed by Eel" which are both cooked fully but the texture of the eel is very similar to that of the raw fish. Once they were familiar with the texture i led them into rolls that had salmon or tuna in them. Now they both love sushi. I would reccomend you have an experienced Sushi eating friend take you back to a restaraunt and give it another go. If you love Cooked Fish more than likely you will love and appreciate it raw. Just a suggestion.
