Ingredients based on a serving for 4
750g floury potatoes (we used Maris Piper)
1 tsp flaky salt, plus extra to serve
1 tsp cider vinegar
1½ tbsp plain flour
3 clove/s garlic, unpeeled
3 rosemary sprigs
5 tbsp goose fat or duck fat
Method we followed from the Waitrose website
1. Preheat the air fryer to 180ºC. Peel the potatoes and cut into large chunks (halve small ones and quarter larger potatoes).
2. Put in a saucepan and rinse in a few changes of cold water to remove excess starch.
3. Cover with cold water and add the salt and vinegar. Put on a lid and bring to the boil over a high heat, bubbling for 10 minutes, or until the potatoes are very tender but still holding together.
4. Drain and allow to steam-dry for at least 5 minutes. Return to the dry pan and sprinkle over the flour.
5. Holding the lid on firmly, give the pan a few firm shakes to break up the edges of the spuds and distribute the flour.
6. Warm the goose fat in a small pan until just melted then pour over potatoes; give the pan a further shake to coat.
7. Put the potatoes in the air-fryer basket, spreading in a snug single layer on top of the rack.
8. Bash the garlic cloves and add to the basket with the rosemary. Insert the basket into the air fryer and cook for 35-40 minutes, flipping them halfway, until crispy and a rich golden.
Serve sprinkled with extra flaky salt

I always park boil my roast potatoes, usually about 8 mins, drain leave to dry out a bit, then with lid on shake them all about knocking the corners off, then add some olive oil tip in to roasting tin.

Hi Susie, Happy New Year to you! I love this recipe and will be trying this on my Sunday Lunch Tomorrow. I thought about you this week as I know you love Waitrose meat, I love the Waitrose Essential Chicken Breasts and always buy them, I did an online order this week and they substituted my usual Chicken Breasts for the Duchy Organic Ones, initially I was very happy as I thought it was a nice upgrade considering they were four times the price. They were not nice at all so tough and stringy I just couldn't believe it, moral to this story is more expensive is not always better! xx

Absolutely agree ! We recently had waitrose substituted one of our favourite wines for a more expensive one , two bottle I took one back the next day !! I only buy the essentials range myself and it is good . Hope you enjoy it xxx

Mmmmmmmm interesting I was told to expel all steam as it's that that causes soggy roasties and leave lid off allow to go cold swish on oil ...seasoning ...etc. lob into ninja at 190 or 180 wing it 😁 for 25 mins they were all perfect parsnips carrots and spuds all in same basket complete opposite 🤔its all too weird I don't think there is a hard and fast rule it's down to each person's findings and preferred cooking method...great vid though always brightens my days xxx

I have to be honest I have never made roast potatoes this way before either ! It was only when I saw the recipe in waitrose with such good looking potatoes I decided to give it a try , I would agree about no hard and fast rules though and I also cannot understand how it works 😂 . One thing I have found , I prefer to pan fry my steaks 🥩 the ninja cooks them but I honestly find a good hot pan so quick and I butter baste my steak and get amazing flavour . It is all a bit weird 😂😂😂😂 xxxxx

Hi Susie, did you do any mid-cook basket shakes or just leave them to get on with it?
@cookingwithsusie
@cookingwithsusie Жыл бұрын
Always do shakes Darren , helps them to separate and keeps them crispy ! Also use your judgement of how you like them the times are guide lines and if they look done to you then stop them and enjoy xx

Hi Anthony , if the thoughts have bones in they take a little longer but if they are boned with just skins I would season them or use a favourite dry rub then I would say airfry 200 for about 10-15 mins depending how big they are ! I would shake them and turn the half way through cooking . I would use a meat thermometer to check fully cooked xx
