I do use a whole bird! I boil it with veggies until just tender , I take all the meat off the bones, discard the kin, I pack the meat in the jars loosely; then I strain the broth I simmered the Turkey in and put that in the jars with the meat, pressure on 10 for 90 minutes for quarts

We always store the lid upside down over the rim of the canner so there is never weight on the seal. It also protects the pressure gauge. We replaced one seal after 30 years of canning. Hope this helps. Be healthy, stay safe and many blessings, Morgan

Today my jars arrived! 150 and the lids! Recently i made a major haul, lots of canned food, noodles, veggies, dried food, turkey, chicken, pork, beef. I canned 36 jars (750 ml something between a pint and a quart🤣) i cooked paprika goulash, meatloaf, made ugly chicken/turkey, pork and beef. In some jars i put a dash of salt, lots of peppercorns, onions, filled it with hot water. 2 jars did not seal, one with pork chops with a real thick greasy edge and one with Turkey. The pork was so delicious i spooned it directly out of the jar and the Turkey! I just love it! This week i have special sticker with 25 % off on 4 items of my choice and next week i have a big haul again with 20% off! Now i have to empty the freezer! It is so rewarding to have well stocked pantry and enough food storage! Thank you to all of you who posted the videos! Best regards from Austria Chrissy

I canned up some Ground Turkey, I also made Ugly Turkey and Turkey noodle soup. I did that at Thanksgiving because the Turkeys were really reasonable and I jumped at the idea of doing Ugly Turkey!

I got turkey really reasonable and canned ugly turkey last year. I opened it up for my dog as she is sick and anything she will eat works. It’s amazing. Not dry at all. I did the whole deboning thing and used the broth from the bones with some meat for canned turkey soup. We also can ground turkey when i can get it on sale. I mix ith with burger. Especially hreat for taco meat and spaghetti sauce.

I use my canned turkey in white chili, soups, enchiladas, casseroles, pot pies ect. It's great stuff. I cook whole birds in my canner. So so easy to debone that way.

This past fall/winter I canned several turkeys using Mrs. Volfie's method: pressure cook the frozen turkey for 90 minutes with 3 or 4 quarts of water. When done, remove from stock, cool & debone. Can meat using stock to fill jars. Moist & delicious. BTW, the feline members of our family ate very well all winter at less than the cost of cat food. Planning to do twice as many when turkey goes on sale in November.

I got a 13lb whole turkey from my food pantry and cut it up and canned it. I had never cut up dark meat before, lol. I never will again either, at least not the legs! I didn't know about feather bones before watching a turkey butchering video and had no clue about how difficult it would be! I did end up with 6 pints of ugly turkey and 5 pints of turkey stock though, So it was well worth my time and frustration! Now to can the 5lb log of ground turkey I was just given! It's so wonderful to learn to can food and not have it go to waste. Thanks for your wonderful videos and awesome information! Love your channel!

Yes, turkey could be an every week event and I’d be ever so thankful. Question (surprise, surprise, surprise): Can the turkey breast be cut into larger pieces, such as thin filets in quart jars, for say...a turkey dinner later with gravy, a side of mashed potatoes, and green beans? I got turkeys for 19 cents/pound in January so bought 5 birds. The first one was a wrestling match to debonair it, but after that the debunking really is a piece of cake. I raw packed the turkey .. ugly method. I made stock with the bones and got LOTS of stock. I used my big canner to pressure cook the bones about 1 1/2 hours to make the stock happen quickly. Excellent stock and much cheaper than store bought $2/32 oz. I used the turkey instead of chicken in recipes. Very happy with my results.

Bottle and freeze dry smoked turkey and turkey bone broth with as many turkey carcuses I can scrounge after Thanksgiving. Turkey bone broth is usually used for chicken broth because of this

I weeped when you didn’t deglaze the pan with a cup of that broth. It would have made the baked turkey’s broth richer. I never let a pan that has fried meat bits go to waste. I deglaze and add a cup of hot water. I let it cool and then snack bag. I label with turkey or whatever umami and toss in freezer. Great added to any greens, veg, broth, whatever.

We got 7 turkies 21~25 pounds each at Walmart right after new years for $5 each. Three fit in freezer for future smoking and roasting, 4 became ugly turkey and ground turkey. They are really easy to debone and raw pack makes for some delicious, tender, and juicy turkey💜.... don't care for the par cooked at all as it seems dry with a weird texture.

It isn't so easy to cross contaminate with poultry because most poultry does not have dangerous bacteria! I just saw several people canning ground turkey raw pack! Even the canners who aren't so cautious are saying don't ever ever do that! What say you Mrs Daze? :-)

The reason some foods are not recommended for canning it's not that they have done a test and found out it makes you sick. It is not recommended for canning because they have not tested it and they may never test whatever item it may be! It doesn't mean it's disapproved it means they can't approve it because they don't know the results but we know the results who can.

Those turkey 'roasts' usually go on sale here at various times for $1.99 a pound. I used to think that was ridiculous considering holiday turkey could be had for around .39 a pound. Well...fast forward to '21. Yeah, I'll be stocking up on those babies if I see that price again and get them into jars. I canned ground turkey when I was first canning and emptying the #2 freezer but hubby just doesn't like it whether fresh or canned.

You’d have to read the gravy ingredients very carefully. Remember, thickeners, such as flour, tapioca starch, corn starch, and so on are not approved ingredients for canning.

My question is about your raw pack and hot pack being canned together. You mentioned that you were starting with cold water. In the canner to avoid thermal shock with the raw pack. When you added the hot pack pints that contained hot broth, I wondered if you had brought the canner up to a simmer while you packed the hot jars, but you said you were turning on the heat after that. So you were putting hot jars into cold water?

I’m crying bc I bought 1/2 gallon jars since we have a big family and now just learned I can’t use them for the meat I planned! So I got out my qt jars and here I go. The question I haven’t been able to find an answer to is can I (for hot packing) simmer them with organic store brought chicken broth (Water, chicken, onions, celery, carrots, sea salt, natural chicken flavor (?😬) and spices)? Or am I only supposed to use drippings/juices from the pieces being cooked? ETA: I know you said any kind of liquid, but My mind is stuck on the fact it’s not just one ingredient on top of the fact I did not make it myself, though the ingredients don’t mention any “no-no’s”, I’m still new, so…. Still paranoid. 😁)

I have a question. You put the raw packed turkey in a cold canner so you wouldn’t have thermal shock. I understand that. BUT you also put the par cooked with hot broth turkey in the cold canner… So why wouldn’t those hot jars crack in the cold canner?

The way to do it is put the raw pack jars into a cold water canner, turn on the heat, then, once the water is very hot...add the hot-packed jars.
