SEV USAL
CHEF AANAL KOTAK
PREP TIME: 10-15 mins
COOKING TIME: 15-20 mins
INGREDIENTS:
FOR SEV USAL MASALA:
• 2 tbsp coriander seeds
• 1 tbsp black pepper corns
• 1 inch cinnamon stick
• 1 tbsp cloves
• 2 tbsp sesame seeds
• 2 tbsp fennel seeds
• 1 tbsp red chilli powder
• ½ tsp turmeric powder
• ½ tbsp dry mango powder
• 1 tsp dry ginger powder
• Salt as per taste
FOR SEV USAL:
• 3 tbsp oil
• ½ tsp asafoetida
• 1 tbsp green chilli (paste)
• 2 tbsp ginger (paste)
• 1 cup tomato (puree)
• 2 tbsp imli pulp
• 1 tbsp red chilli powder
• ½ tsp turmeric powder
• 1 tbsp coriander powder
• 1 tbsp cumin powder
• Salt as per taste
• 1 tbsp lemon juice
• 1 bowl dried white peas (soaked and boiled)
• 2 tbsp sev usal masala
• 3 cup water
• 4 nos. bun
FOR TARI:
• 3 tbsp oil
• 2 tbsp garlic (finely chopped)
• 1 cup tomato (grated)
• 1 tsp turmeric powder
• 1 tbsp coriander powder
• 1 tbsp cumin powder
• 2 tsp garam masala
• 1 tbsp red chilli powder
• Salt as per taste
METHOD:
FOR SEV USAL MASALA:
• First in a pan dry roast coriander seed, black pepper corns, cinnamon stick, cloves and sesame seeds, roast it for 5-10 minutes.
• Then add fennel seeds and dry roast again for 5-10 minutes on medium flame.
• Transfer the roasted ingredients in a mixi jar, then add red chilli powder, turmeric powder, dry mango powder, dry ginger powder and salt as per taste.
• Grind everything well.
• SEV USAL MASALA is ready.
FOR SEV USAL:
• In a pan add oil, asafoetida, green chilli paste, ginger paste, tomato puree and cook it for 7-8 minutes.
• Then add imli pulp, red chilli powder, turmeric powder, coriander powder, cumin powder, Salt as per taste, lemon juice, dried white peas, sev usal masala, water
• Allow it to cook for 10-15 minutes.
FOR TARI:
• In a pan add oil, and garlic and saute it for 1-2 minutes.
• Then add grated tomatoes, red chilli powder, turmeric powder, coriander powder, cumin powder, garam masala, salt as per taste.
• Mix it and cook for 1-2 minutes.
• TARI is ready.
• Serve sev usal, with bun and tari.
