Yes i said it, better than beignets and why? Well, there's no eggs and there's no dairy yet somehow these beautiful pillows of love turn out soft and airy, like a cloud. These are from East Africa (and an awesome place to start to learn about cuisine from the sunny shores of Mombasa and Zanzibar) round there they are known as Mahamri. I love mahamri especially when you add mbaazi (pigeon peas cooked in coconut) as a side. This recipe is a 'no fail' recipe as long as you follow the ingredients and steps.

I just made these fluffy goodness! Thank you so much. Everyone in my house is greatful for them. They came home greeted with mahamri dusted with spiced sugar and chocolate milk! I love that all the ingredients were readily available in my house. The kids want them with Nutella for school! We're having them like mini donuts but I bet they'd prefer them more with the mbazi curry you showed. That's how I had it in Kenya! Thanks again.xxx

Hey I’m from Lamu so we eat and make mahamri like pretty much religiously 😂 and I like to try different mahamri recipes I can tell you this one is definitely a yummy one I made it just now my daughter doesn’t even like mahamri much and she cleared her plate!! We had them with shrimp biriyani sauce❤ Asante sana tamu kabisa,, Wru if you don’t mind me asking, love your Swahili food site ❤❤❤

Thanks for the recipe. Tried out tonight and it came perfect. The only issue I had is the first 5 are perfect the rest cracked and allowed oil inside....tried to reduce the heat but no change..... please help.

Interesting to know that dough can be frozen. Have you ever frozen chapati dough?

Yes, it makes life so easy and yes, I’ve frozen chapati dough after I’ve put ghee, rolled, cut and tucked. It needs to be put in an air right container. Let it thaw out fully when you’re ready to use it, roll the chapati out and cook

O.G Francis I hate when that happens with yeast. Make sure you put it in the fridge after you open it. Also, it needs to be in a well sealed container

Hi Munira. When I make the smaller mandazi's they come out well. But when I make the bigger ones.. mahamri.. they soak in oil. What could be the problem?

Mnazi would be a appropriate word Nazi reminds me of the Second World War. but anyway a good recipe thanks. I regularly had this at a street cart hawker in Mombasa on my way to school way back in 1958 - 1969 when I was living in Mombasa ,Now I am old and miss Mahambri and Mombasa. Cheers.

3 c flour 1 tsp yeast ½ cup sugar 1 tsp cardamom Pinch of salt 1¼ c milk 1 tbsp butter And don't add sesame because it doesn't add anything to it, it doesn't taste good, and when they fall out it's annoying to clean the oil
