Sweet potato eggs with spinach |kitchen tales by Neethu

Breakfast idea part 2
Sweet potato 350 g
1 sweet corn
Wash the sweet potato properly and Cut into big chunks and steam them in a steamer for 20 minutes .
Once sweet potatoes and corns are cooked , transfer them to a bowl,
Sauteed spinach
1 bunch spinach leaves
Blanch the spinach leaves , (I have explained the method for blanching spinach in my palak puri recipe )strain the water and in a pan add olive oil then add 5 finely chopped garlic, saute them until softened then add blanched spinach and saute until rawness goes then add 1/2 tsp salt , 1/2 tsp pepper , 1/2 tsp mixed herbs
Salad
I have used 2 type of leaves romaine and iceberg lettuce
Salad dressing
Extra virgin olive oil 4 tbs
Balsamic vinegar 1 tsp
Honey needed
Salt needed
1/2 tsp pepper
1/2 tsp mustard sauce
Add all the ingredients to a bowl and mix really well and refrigerate until use
Do not forget to use salad spinner to remove excess water in leaves ( if u have doubt please check Caesar salad dressing video )
Shake the dressing and Pour over the leaves just before serve
For eggs
Add butter to a pan , then add sweet potato ( cut into cubes )saute well then add well beaten eggs , we like it half cooked . Flip to the other side and transfer to serving dish garnish with salt , paprika
Sweet potato
Brush coconut oil. Chill powder,salt

Butter is the better option or even Duck/cow/buffalo lard which was the choice available for countries that lived in the cold for the longer part of the year. until food preservation techniques and transportation gained momentum and food moved from region to region for "continental" dishes We render the chicken or the meat fat and store them.
