Sweet Potato Quiche with Proscuitto

After seeing this made on Thursday I wanted to make it myself! I love the fact it is gluten free AND using sweet potato as the base means more nutrition - you know me!
I used a veggie peeler to make the slices of sweet potato for the crust however you could use the Thermomix cutter if you don't mind about them not being long! You do need to allow some overlap as there is some shrinkage when baked - I left too much overlap however chopped it off once finished and it was like eating sweet potato chips!
You can also put in whatever you want or need to use up in the quiche. I added some grated parmesan as I needed to use it up.
