Thanks ever so much for this. I don't know why but though I used the same formula for the kenkey - 1&2 mixture, cook one and two portions for mixing. Please forgive me for asking a personal question - Are you married, or can you marry my baby brother just so I can get to eat your food on the regular? On a more serious note, thank you so much for sharing this with us, especially the tips about soaking the onions in salty water and brining the seafood before frying it. It shows that you have grown up around our elders. Your gestures remind me a lot of my long-departed Grandma Ekwa. Many of us live, are born and/or have grown up outside of Africa, but our parents have fed us their delicious food and we are addicted to it. Ga kenkey or kom is one of my very favorite dishes; one of my aunties introduced me to it close to 50 years ago. When I am sick, sad, very happy, I crave it. It is to me the quintessential comfort food by excellence. It did not even know New Year's was Kenkey Day 😂. You have just given me the courage to try and make it. Thank you so so much for that!
