Sweeeet video, Lance! To clarify the wattage: All three 807 models actually use the same motor. The difference is in the disc geometry. Specifically, the pitch on the coarse teeth on the LS. The burrs are creating a different resistance than the standard 807 set.

Interesting. I took the wattage off the ditting website itself. Go have a look. They give watts and rpm and grind speed. I thought it was weird they'd have different motors, but the spec sheet they provide suggests so

@@LanceHedrick Yep, we're aware of the different wattage rating. For further clarification, if you put machined burrs in the LS it'd operate at around 500 watts. The cast steel burrs are rougher and cause particles to roll off more slowly than with machined burrs. This increased resistance will pull more amps, and operating power is relative to that.

Hey younger Lance. Guess what. The 807 lab sweet was 1500$ off and i pulled the trigger. Can’t wait to taste it. If you know photography, the lenses are more important than the camera. I think it’s similar in coffee. The grinder is more important than the machine. Cheers!

1: you mention Turkish. I would love to see a video on Turkish coffee. Everything on YT is about espresso or drip, and Turkish has very little attention. 2: When you chirp the burrs is that not causing damage to them? Thanks for the video, have a great weekend!

@@LanceHedrick By far my favorite cups I've ever made are a modified Turkish style. Start with fines leftover from sifting for pourover, in a cezve. Add cold water, 1:10 ratio, and stir to fully saturate the grounds. SLOWLY heat on a stovetop (should take at least 5 mins). As soon as it starts to rapidly boil over (around 235ºF!), remove from heat, briefly stir, and let cool to drinking temp in the cezve. Once near drinking temp, press through an Aeropress to filter the grounds. It is truly amazing, HEAVY flavor notes from my light roast coffees and a rich body, even after filtering. I'm sure you're busy but I really think you should give this a try.

As someone who only got into speciality coffee recently, I find myself really curious and interested whenever you mention older models of grinder or other equipment. I'd love to see some kind of dedicated video that covers the way the wider coffee "metagame" so to say changed over the years (even if only as far back as the early 2000's), with some perspective of how the heavyweights of yesteryear compare to the popular grinders of today, and why things changed the way they did.

The more I learn about burrs, the more I think a burr needs to be custom made for any particular grind size and any grind adjustment should involve a burr change.

Those last few thoughts you had on the window of tasty espresso, that suddenly helped me to understand the difference of unimodal versus conical :-)! This whole time I didn't know that type of difference is existed. I didn't know that type of difference was what creates that amazing shot for unimodal. But now, I see why I love my Baratza Sette 270! Lol. It's incredibly easy to dial in. Whether I have a 15-second shot or a 45 second shot, I can be happy with the results. Lol. Interesting! Either that, or I have incredibly low standards. Lol. Or amazing coffee from a Canadian roaster: iDrinkCoffee :).

That’s a sweet grinder although perhaps a bit big for the home, still waiting to see that home grinder with those burrs that would be sweet especially with variable rpm. I believe The Peak actually came out in 2015 and was largely driven forward thanks for the craze created by Perger WBC performance with an EK43 a couple of years prior with the legendary pre 2015 cast coffee burrs (although he wasn’t the first to use it for espresso) Mahlkonig even tried making a espresso version of the EK43 that never made it beyond prototype. The Peak where largely built on the k30, that also had its fair amount of issues. It’s certainly helped they moved on to E80 and E65 much better grinders.

Sorta. My friend Kyle Ramage worked at mahkkonig and helped create the peak. He never mentioned perger being a driving force of that machine. Also, it is important to note Scott Rao was the first to use the ek43 for shots at his Montreal shop pre 2010. But yeah- you could outfit a weber eg1 with sweets and have variable rpm.

@@LanceHedrick Perger wasn’t part of the PEAK development, but he among others use of a cast burr bulk grinder played a very important part of the industry moving in that direction of which Rao also play an important part, largely thanks to the demand it created. No Perger wasn’t the first to use it, it was to my knowledge actually bit of a coincidence, not even Rao should be credited for that, as it was already used in the home segment before 2010, but it was Perger performance at the WBC that really got it to explode, the amount of sold EK went from low sales and a grinder collecting dust to long lead time in matter of months after his WBC performance, without all that craze I don’t think the cast burrs would have gotten such attention and the PEAK among other bulk burr equipped grinders greatly benefited from it, the question is also if they actually would have tried those burrs if not for all the talk in those years about cast burrs. But Mahlkonig was certainly also good at taking advantage of the attention, they made sure people remembered it, plastered Pergers face on the EK etc. The EG is perhaps a SD grinder but not really one made for home….. the price is also mind blowing compared to others especially for us none American.

Yes. Perger helped. And rao used it in like 2006 or so. Ek43 wasn't even a coffee grinder. There is no documented use prior to raos Cafe. I'd be happy if you had proof of something before then beyond anecdotes. And I'm familiar with pergers massive influence. I've been in the coffee industry a decade and have followed pergers every move since he competed lol. The peak had little to do with perger, though. If anything. The finding of the old cast burr was somewhat if a fluke and the team tasted them and were wowed. Granted, I am getting info from one of the founding people of the peak, so I guess he could be hiding outside influence, but he isn't shy to admit the influence perger had. I try to base my opinion and thoughts in grounded facts as best as I can. What do you have to prove what you say beyond speculation? Just curious! Thanks for the chat

@@LanceHedrick I never bought the story about that they somehow stumbled on a burr set in a drawer that wasn’t really that unknown to begin with. I was more then aware of its existence as Ditting grinders where widespread and not uncommon where I live, people bought these from grocery stores, market etc. as cheap brew grinder for the home and often with these burrs in them, every one who knew about Ditting or played with modding Bunn where familiar with those burrs or at least heard about them, but many had at some point replaced them with the Machined version at that time many thought the machined where better. I seen plenty of 804 cast of that reason as they are really that common in europe, especially in old grocery store grinders, even today you stumbled upon them if you buy an old grinder. But it’s a good story that sells, I give them that much, but for a european it’s very hard to truly buy that story, I definitely think it should be taken with a pinch of salt. The EK43 was a multipurpose grinder that could be set up for spice, grain and coffee, several of EK43 existed in europe that was used as grinding coffee for customers and where standing in small grocery store just like the Ditting. My local supermarket and small shops had one and that was more then 20 years ago and even my stepfather had one in his small shop as well, while it might not have been the norm in USA, Mahlkonig and Ditting grinders where the norm in many grocery stores in the part of europe I live in for decades. I can even remember them from when I was a child, basically every small shop that sold coffee or supermarket had one of these standing. So with all respect Rao probably did not come by it, he must have seen it in Europe, for europeans it wasn’t an odd sight and it was often bought as cheap grinders especially for brewed. I seen people who had this grinder way before 2006 as a home grinder, I think people today will be shocked at what we had and used in the earlier age, we literally had commercial machines sometimes of several groups, large commercial grinders, bulk grinders and what not it was really ridiculous. There is no documentation because it was just the average person using it, most home users especially at that time where not really active online they just brewed, drank, enjoyed and experimented on their own or among friends, that was how it was plus 12 years ago, especially outside USA, I have with some fellow nerds done a lot of stuff for many years we never ever made any of it public and sometimes you see the same finding in other people work.

All of this is pure speculation unless you have even a modicum of proof beyond my taking your word. Regardless, yes. Of course one should take the story with a grain of salt. But, it should be noted Kyle no longer works for mahlkonig he he stands by a similar story to that. Not sure why he'd be marketing to a friend who already owns this machine... In any event, you seem to be very much in a position where you can't be turned left or right because, as you've said many times, you are European and it apparently a priori makes your knowledge more grand than mine, which is fine. As for me, I'm bored or arguing over something that can't be proved one way or another. Cheers and brew some tasty coffee!

I got this grinder myself and it’s great. However I had to change the calibration in order to grind fine enough for espresso. And even now I cant get shots longer then around 30 seconds. Sometimes with lighter roasts that are a couple of weeks old, only around 20 seconds. And this is with some slight chirping of the burrs.

I will need to align mine. I just did the marker test and the upper burr at least is terribly aligned, turning the burr by 180deg shows that the same burr carrier side is higher so probably the burr carrier is bad.

At what point does “perfect” get in the way of “good?” Does a $3,000 - $6,000 Ditting really make that much of a difference over a fully-upgraded-and-modded $200 Baratza Encore? Honestly, is it really worth it (if you’re being perfectly honest).

I'm not sure what mods you're doing to an encore other than upgrading to virtuoso burrs, which still aren't very good imo. I can't stand them. Worth is relative to the person, of course. There is a MASSIVE gap between them, yes. But whether it is worth it is dependent on the budget of the one asking. If doing only filter, and wanting to be budget friendly, I recommend getting a fellow ode with the SSP cast or MP burrs. About a $500 package

I'd vote for: Bentwood Vertical 63 :) Can do everything well (dark roast espresso, medium and light, all the way up to filter) and gives a good balance between body and clarity. Low retention, very nice adjustment ring.

I do now, yes. I was sent the 807 filter grinder but with Lab sweet burrs. Didn't realize they came with different discs than the lab sweet. So, when I saw the listing for the motors being different, I assumed they were truly different motors. I feel that to be a fair assumption lol

What would seeing it be made do? You know that the look of the espresso has little bearing on taste. It is hyper dependent on the roast profile, freshness, etc. I tend to drink incredibly light roast coffee multiple weeks off roast to get little crema. If I were to show it, many might think there was something wrong because people largely don't understand the nuances of extraction. So, what would you need to see the shot for?

@@LanceHedrick I told you why. I am pretty mainstream in my coffee tastes. Cooking has been my thing for more than 50 years, and someone showing how to cook a meal and then not show the final plating would be uncommon. Like I said, it is just how I reacted emotionally to your video, and I thought you might want to ponder upon that, as you clearly have. My personal cooking also would be regarded as bland by many and when cooking for people it really helps for me to know them so I can adjust accordingly. Clearly not possible for a wide audience. Thank you for explaining. BTW on a totally unrelated note I really enjoy watching the KZbin videos of Chef Jean-Pierre, as do I yours.
