I have owned Martin, Gibson and Taylor and just bought a Takamine GN30CE and it has surprised me of its quality and tone. For the money it was an excellent buy...

Is this spruce or cedar? Looks like cedar to me.

It's a solid spruce top. It just has more antique natural finish to it. (At least the one in this video does).

What's the difference between this and the dreadnought version? Would it be correct to say the dreadnought version has a deeper, fuller sound?

A cutaway does reduce some of the resonating cavity of the guitar, how significant the difference is up to the listener to determine. The manufacturers take that into account and adjust the bracing and structure of the instrument to mimic one to the other. It's not a better/worse, just different. Am currently having an issue with the electronics of this model, when having it plugged in. It Only delivers signal to the amp when the tuner is on but when the tuner auto shuts off the signal to the amp stops too casuing an abrupt silence from the amp. I dont know if this was a an issue that the quality control guys at takamine overlooked. Partly my fault for not sticking around too long in the guitar shop to test it properly while buying it and only tested the natural sound and not the plugged in one. This was a chinese made takamine. Hoping to have this looked into at the guitar shop on my day off, thus begins my long tedious journey back... What a shame could have been an awesome guitar.

KoLoko Toys it depends Sir. There are Japan made and China made. i guess it will be seen inside the body. I have GN77KCE-NAT. I thought mine is made in Japan. Its from China but IMO its great and durable nonetheless. :) Its really got a good sound.

What is the significance of pinless bridge?

It makes re-stringing your guitar easier and faster. You don't have bridge pins to take out and put back in when putting new strings on it. You just slide your string through the back end of it put it through the tuning post, tighten it/tune it with the tuning peg, and you're good to go.

I have a cherry red takamine g series EG560C made in Korea it’s 20 years old and I bought it in Tin Pan Alley London. I taken it round the world with me so it’s a bit banged up. I love it can you tell me if they make them anymore as I can’t seem to find one?

GD is a dreadnought style body. GN is their smaller body series. The dreads have the large, full bodied sound; GN are also very "dready" sounding, but not as big of a body, and perhaps a bit smaller sound. But still great.
