Here is my simple step by step guide for you all, as i understood her Bengali: 1. Make a few slits on 4 x chicken legs 2. In a bowl add 4tbsp greek yogurt, 1tbsp ginger/garlic paste, 1tbsp Kashmiri red chilli powder, 1tsp coriander powder, 1/2tsp turmeric powder, 1tsp cumin powder, 1/2tsp garam masala, 1tbsp tandoori masala, 1.5tsp salt, 1.5tsp black pepper, 1tsp red food colouring. 3. Squeeze 2tbsp lemon juice on marinade and mix well. 4. Add 1tbsp oil and mix. 5. Add chicken to marinade and mix well, into the slits too. 6. Leave in fridge overnight or leave for 3 to 4 hours atleast for marination to flavour the chicken. 7. get chicken out to room temperature and mix well with masala in the bowl. 8. Put foil on the oven rack and pierce some holes into it with a fork 9. Preheat oven to 200c and then cook chicken to 200c for 30-35mins. 10. After 15mins, brush chicken with any left over masala and cook for further 10mins. 11. Turn chicken over and cook for further 10mins. 12. Add chicken to griddle pan and cook for 8 to 10mins, brush some oil over chicken to keep them moist. 13. Add some onions mid way and let them grill with the chicken. 14. Add chicken and onions to a pot and add a cup of charcoal in there too. 15. Ignite the charcoal by sprinkling some oil onto it and use a firelighter or match stick to light it. 16. Cover pot with lid and let it smoke for 5mins to give chicken its BBQ flavour. 17. Garnish with coriander leaves and some slices of cucumber and lemon slices on the side. Done. 18. At 0:53 - the marinade ingredients: (Depending on how many pieces you wish to cook, but in the video the lady used as per below): 1 to 2 Tbs (Tablespoon) Yogurt (Curds) 1 Tbs Ginger Garlic Paste 1 Tbs Red Pepper Powder (Red hot chili powder) Pimenta Roja is Hot, Cayenne Pepper is mild, Paprika is slightly sweet. Kashmiri Chili is mild but gives nice red color. You may choose the best you like. (I use both Pimenta and Kashmiri. (Kashmiri is available in any Indian, Pakistani and Bangladeshi grocery store). 1 Tbs Coriander Powder 1 Tbs Cumin Powder 1 Ts (Teaspoon) Turmeric Powder ½ Tbs Garam Masala Powder (This is hot spice powder made with a blend of Black Pepper, Cloves, Cinnamon, Bay leaf, Green Cardamom, Black Cardamom, Nutmeg, and it also includes Coriander and Cumin etc.) ½ Tbs Kashmiri Red Chili Powder ½ Tbs Salt or less/more (as required) ½ Tbs Black Pepper ½ Ts (Teaspoon) or Little bit of food color (Preferably red to give a nice tandoori restaurant style appearance). This is optional though. ½ or 1 Lemon or Lime (Depending on how much juice comes out). Mix well 1 Tbs Oil (You may use your choice of oil, except do not use Extra Virgin Olive oil, because of low smoke point). Again mix well and insert the chicken pieces in the marinade. The best results for marination is overnight but if you want to cook immediately, then at least marinate up to 4 hours. (You need to refrigerate if you decide for overnight). At 2:27 she places the pieces on a foil on a tray. On the foil, she makes holes with a fork to let the juices flow or drop in a tray below. She is cooking in an oven preheated to 200°C (centigrade) or approximately 400°F (Fahrenheit). The actual conversion is 392°F. She is basting the marinade halfway through and also turns the pieces to cook on the other side. * I do not understand the Bengali language but to the best of my knowledge, at 400°F, the chicken should cook between 30 to 35 minutes, depending on the size of the piece. The best way to check if the chicken is properly cooked is to have a food thermometer. Insert the thermometer pin in the middle of the chicken (let not the pin touch the bone). The thigh temperature should be 165°F and the drumstick should reach 170°F. At 3:38 she places the chicken on a grill like heavy bottom pan, to get the grill marks. This step is really not necessary but it’s just dealing with aesthetics to get a pleasing appearance. The danger is the chicken is now being over-cooked and may lose some moisture and may dry out a bit and become hard and chewy. She then places onions on top which in my opinion, she could have placed it earlier on the foil itself at the beginning. But that’s just me. Finally at 5:12 she smokes the chicken with a charcoal for about 5 minutes. (That is good if you like the smoky flavor, but don’t overdo it).
