Here in Chihuahua, Mexico we have a "Mexican Pizza" made with a pizza sized white flour Tortilla, a little thicc, almost like pita bread, with a tomato based pico de Gallo sauce, carne asada and Menonita Cheese on top. It's Incredible.

Because it absorbs moisture and then becomes soggy. For the crunch to still be present he'd have to cook all the moisture into the chip and then continue cooking until said moisture leaves. Even then it wouldn't become crunchy it'd become hard. If you want to experiment on your own take some chips and put them in the bottom of a bowl, then put some kinda meat or generally anything that isn't dry on top and the chips will become mush. Some people take advantage of that and make mushy chips they then stir in with a nacho filling.

The Mexican pizza has survived on nostalgia. Back in the olden times it had black olives, green onions, more beans and more meat. Then Taco Bell discontinued black olives, then green onions, then changed the ammo of beans and meat, and what you’re left with is whatever that disc of shell and plastic cheese is. Now it’s just a vehicle to deliver taco sauce packets to your mouth hole. I guess.

We got Taco Bell here in the UK a few years back and I remember when it opened going in to try it, crunchwrap supreme of course, and there was an American lady getting angry at the staff because they didn't do a pizza.
