This week on Basics I'm going to show you how to transform taco night. I'll show you how to make corn tortillas, different proteins, and garnishes.

Ingredients & Grocery List:
+ For tortillas:
2 cups Masa harina
1 1/4 cups Water
+ For chimichurri and skirt steak:
1 Fresno pepper
2 Tbsp Red wine vinegar
1/4 cup Olive oil
Handful cilantro or parsley
4-5 cloves garlic
Small handful fresh oregano
Salt and pepper
1 skirt steak
+ For the chicken and its marinade:
2 chicken breasts
2 cloves garlic, roughly chopped
2 limes, juiced
Shakes of:
White pepper
Cumin
Smoked paprika
Oregano
Cayenne Pepper
Olive oil
Salt and pepper
+ For the chorizo potato filling:
2 russet potatoes
Dash of white vinegar
2 links of chorizo (casings removed)
Vegetable oil
Salt
Olive oil
+ For the rajas con crema (to accompany the chicken):
3 poblano peppers
1/4 white onion, sliced
Dried oregano
1/4 cup heavy cream
1/2 lime, juiced
Salt and pepper
+ For the pickled radishes (to accompany the chicken):
4 radishes, thinly sliced
2ish cups of apple cider vinegar
Mustard seeds, whole peppercorns, and dill (optional)
+ Other garnishes (to accompany any taco):
Half of one white onion, diced
Cilantro or parsley to taste
One lime, juiced
Cotija or feta cheese
Special equipment:
+ For the tortillas:
Tortilla press or large skillet
Nonstick or cast iron skillet
Gallon size plastic storage bag
+ For the chimichurri:
Food processor
Gallon plastic bag for chimichurri marinade

Invest in a rice cooker; you can use it for other things along with rice. The most important part is finding recipes for foods you actually like to eat and modifying them to suit your needs.

I'm Mexican and this is one of the best attempts at tacos done by an American. Seriously, he made the tortillas right and we do use all of those ingredients. The chorizo and potatoes combination is actually quite common. The only thing we do differently is putting the Rajas with cream on top of another thing, usually those are it's own taco. And finally, all of those tacos would have salsa on them no doubt, that's perhaps what's rubbing people the wrong way, since we don't use cotija cheese as often with these kind of tacos. Nevertheless, I'm so grateful he used an actual Mexican cheese aunlike many people. Way to go Babish!

Why limit yourself to what fits? That's why you put an empty tortilla on your plate. Whatever falls off or drips out of the one you're eating is just part of the filling for the next taco. Efficient AND delicious!

Chorizo and potatoes cooked into scramble eggs with some corn tortillas was a common breakfast growing up. My step dad was from Michoacan, he made a lot of damn good food but that was always a nice thing to wake up to in the morning.

@@coolamp ​ Ha! No, you misunderstand, maybe cuz you don't have the cilantro soap gene? It's not that we can't taste it, but rather we taste it VERY strongly and it is VERY unpleasant to us. There are many in the world that have a gene that makes the taste of aldehydes both very strong and very unpleasant (there is another gene that makes bitter strong and unpleasant, as well). Since the brain tries hard to associate new flavors with memories, when people encounter a new, unpleasant flavor our brains try to find an unpleasant experience to associate with that flavor. That helps to reinforce "don't do that again" in case the unpleasant experience coincides with danger (like people getting really drunk-sick not ever drinking the thing that "made" them sick again). Smell and taste are very strongly connected in the brain (an evolutionary derived response to protect an animal from a potentially dangerous substance that could be detected by odor, such as rotten food or some poisons). The soapy taste of soap comes from aldehydes. Bed-bugs exude an aldehyde that smells very strong. Therefore, many people with the anti-aldehyde gene associate aldehydes with either the taste of soap or with the smell of bed-bugs, neither of which I think we can all agree we don't want to eat. Cilantro is especially packed with aldehydes, stems the most. No one knows what percentage of the population has the anti-cilantro gene but there is evidence that a significant percentage of the world's population dislikes cilantro, very nearly regardless of cultural background or ethnicity. Its the only ingredient I've found so far that has a website dedicated to its hatred. The "evolved" comment was a derivative of the "bald men are more evolved" joke. A smart-Alec, self deprecating, redirect with a dash of petulance.... :)

Technically, a taco is a tortilla with food inside, which is what this guy’s making here. He’s not claiming to make “authentic Mexican tacos” so I don’t see what the fuss is about. Different palates call for different ingredients, so get over it. Loved the video and props for making tortillas from scratch. The chimichurri looks delish!

I live in Norway, so it's fascinating to watch cooking shows from different continents, especially when they make something with very specific ingredients, and I have to google substitutes for half of them. The store closest to me has like red, green and habanero chili peppers, and that's it. All of Babish's spicy dishes require that I fly somewhere :)

I'd love to see a video about how you keep your kitchen consistently clean. I get overwhelmed with cleaning pretty easily, especially with dishes.

Do you have a dishwasher and do you use it as one? (Actual question, a lot of people have a habit of washing their dishes before putting them in the dishwasher, thus defeating the purpose of owning a dishwasher). If you have one that you don't find satisfactory, and you use pods, try replacing them with boxed powder detergent (or gel, but that has some limitations for chemistry reasons) and filling both the main wash and pre-wash compartment. Pods substantially worsen dishwasher performance because they skip a step, while being advertised as though they're an upgrade. I have no idea if any of this advice improves your situation, but it might!

Having grown up in a Hispanic household, its not uncommon for these meals to have been made relatively often, yet I still love to watch and learn from Babish and have definitely gotten more into cooking not only food from my heritage but from so many other places and cultures too.

Can we get more videos like this? With a few asides this one was very similar to how people normally cook. Trying to do multiple things at once and finding the proper palate paradigm. Your videos are wonderful for zooming in on one aspect of cooking and then showing how to apply that aspect to multiple things in the kitchen. But people tend to eat more than just a fresh loaf of bread for dinner. Which means that they either get overwhelmed when cooking several things at once OR they take 6 hours to make it, get tired, and give up. A video on time management (and all that it entails--which is a lot to be fair) would be incredibly helpful. Whenever I'm talking to people about cooking it's THE MOST common thing that comes up next to finding the time to cook at all.

First of all to some of you guys complaining that this 'should barely be considered tacos'. You need to realize that this isn't authentic mexican and thats okay. You can have a mexican style dish without it being authentic. That doesn't make it worse, that just makes it different. The mindset that something HAS to be authentic is ridiculous and what holds cuisine back. Good tasting food is good tasting food. period. I mean look at even chinese cuisine. It has very unique adaptions of japanese dishes and korean dishes. Hell even in chinese native food alone, a single dish can have multiple versions just based on the location in china it is made. Similar to how american BBQ is vastly different just between states. Adaption is good in food. It's meant to taste good, not adhere to history and rules. Also about the cilantro, some people find it tastes like soap to them. This isn't just a matter of 'they don't like how it tastes' but it is an actual GENETIC thing that they taste it differently. Some people taste cilantro properly but might not like the taste, but some people just don't taste it correctly at all. It's hard to imagine espeically with how good cilantro is but it's a thing. So just because it is important in mexican cuisine doesn't mean that people who don't like it or can't taste it properly shouldn't be given a substitute option.

As someone who cilantro tastes horrid to, it can literally ruin a dish. It's sharp and bitter, I can get around it and it's not like it makes me gag but it tastes like someone literally sprayed chemicals on my plate.

Babish is the only guy who can blatantly be sponsored, and not be annoying about it. Like that taco meal kit actually looked pretty cool. Like as long as he stands by what he is sponsoring, I can respect it. Honestly, Babish is one of the few KZbinrs who deserves the 3 million subs, and the success he's been given. Seems like a genuine and chill dude. It's also rewarding to be one of the earlier subs, and watch his viewership explode. I think I first subbed because this channel crossed over with my love of movie pop culture videos, and the KZbin algorithm (for once) suggested this channel.
