melted vs unmelted is a preference. personally like melted but i just put the cheese in the bottom of the shell then put the meat on top melts it on its own, and the overall taco isn't going to be cold if the meat is hot.

As a chef, I can honestly say he did a fine job. Loads of little technics he doesnt know, and kitchen habbits... But fuck it you are at home and its taccos man... Pro tip for chatters: when ground beef is finished, add a cup and a half of beef broth per pound of beef. let simmer till most is absorbed, scoop meat out, place soft shells in the left over broth, then add cheese and beef, and fold into a taco shape, cook till crispy, take off, open and add sauces/toppings. and serve.

Unfortunately he's not gonna see this, but the reason there's so much "water" coming out the meat is because he's using Kobe meat. It's fat. Not water. It's intended for burger patties and the like, where it's cooked to medium rare, so all the fat doesn't render out of it. It's gonna be helluva mess to eat, but it is what it is.

You can tell it's water because it's not frying and browning the meat. It's simmering in it's own water along with fat. But, majority of the mass is water.

ground beef tacos.. psh.... gimme a few lbs of pork, salt/pepper/oregano/cumin/red pepper spicey flake things.... mix with olive oil and rub on the pork... get a high pan sear the meat, and add 2-3 cups of orange juice. let cook for a few hours covered..... cut up some onions get em caramelized in another pan add those ontop of the taco when it is ready and yes have hard shell tacos because soft shell tacos suck... PUT CHEESE ON BOTTOM OF SHELL SO IT MELTS AND HELPS HOLD THE SHELL TOGETHER, add your pork more cheese if you want, lettuce and make sure you got some limes on hand, cut your limes into 4's and squeeze some lime on each bite! delicious!!!!
