Tahchin Perfectly layered saffron rice & chicken Raw Herbs, Fresh Salad, infused yogurt تهچین مرغ

Tahchin means arranged at bottom which relates to the bottom of pot where you beautifully arrange and layer the saffron rice & chicken. It is the show stopper of all saffron rice & people call it Rice Cake. And it taste heavenly.
ingredients for 4
rice 3 cups
3 egg yolks
thick yogurt 1/2 cup
brewed saffron 1/2 cup
chicken 1 whole leg or 1 whole breast
barberry 1/2 cup
2 cloves of garlic
butter 5 tbsp
spices: turmeric powder, black pepper powder & salt
تهچین به معنای چیدن در ته مربوط به ته قابلمه میباشد که به زیبایی برنج زعفرانی بهمراه مرغ لایه لایه چیده میشود. ملکه برنجهای زعفرانی و گاها از آن بعنوان کیک برنج یاد میشود با طعمی بهشتی
مواد لازم برای ۴ نفر
برنج ۳ پیمانه
زرده تخم مرغ ۳ عدد
ماست چکیده ۱/۲ پیمانه
زعفران دم شده ۱/۲ پیمانه
مرغ یک ران کامل و یا یک سینه کامل
زرشک ۱/۲ پیمانه
سیر ۲ حبه
کره ۵ قاشق غذاخوری
ادویه جات: پودر زردچوبه، پودر فلفل سیاه و نمک

I love this. As an American, I’m happy to see you do this “probably the original way” over a fire pit. I add sliced almonds to my zereshk and some white sugar to my mix. Tachin is one of my favorite dishes to make. Love the way you include the dog. I’m sure he or she is a happy dog with your way of feeding him and the simple way of life.
