Dear cute TJ, today I learned a new thing from you: When you are eating noodles, you first pinch some of them with the chopsticks, and then, you turn the chopsticks so the noodles don't fall again into the plate. I have been eating noodles the wrong way all my life 😓. Thanks for showing me the ultimate technique, master.

U r welcome. Love, sensei TJ

It also keeps whatever sauce or soup that's on the noodles from flying around everywhere. I wish I could master such a technique. XD

I grew up eating both. My favorite is the eel noodles. We had pre-order ours because by the time we got to Tainan the shop would be out. My grandmother would bring them home in little wrapped plastic bags of deliciousness. They have eel noodle shops in Taipei.

First time watching. Thanks for the history lesson, and I'm digging your style! As for the food, to me, the Dan tsai mien and the soup eel noodle are the king and queen of Taiwanese food. Tainan gets overlooked a lot, but it is (still) the capitol of Taiwanese culture.
