I bought a Kurosaki bunko on a whim. Wow this little guy cuts so smoothly. Before long I was cutting my onions too finely.

Great video, very interesting to see the layout and workflow of these shops. I'm surprised that so many of the people operating the spring hammers are not using ear protection.

I can’t get over the fact that no Japanese knife grinders have ever heard of diamond wheel dressers 🤷♂️.
