You could soak the chips in a little bit of hot water and then add that water to the meat once ground. If you really mix it up, they'll be fully incorporated and help give the meat a very snappy texture

I'm pretty sure it's left unbolted for cleaning purposes. If it was attached to something it would be 200% harder to clean

You don't need to bolt the item itself. If you have a stand with bolts sticking out you could put it on said bolts and then lock them down with some simple clamps. Keeps it locked in place and is also easily disassembled for cleaning.

To get takis flavor: Grind takis, briefly boil takis in water to get flavor off, filter with fine mesh sieve, takis tea!, boil/simmer down takis tea until significantly reduced (syrupy?), add to pork, sausagify, ???, profit.

You should make your own Taki powder and try this again. Still add the chips but have extra flavor on the side. Maybe throw in some tajin and or lime. That could make a fantastic sausage

At mythical kitchen, the chef devised a taki powder recipe if I recall correctly, so you could try just adding the flavor if you really wanted a takis fuego flavored sausage without worrying much about consistency.
