I love that takis are so violently unnaturally red that it absolutely blows out the color balance on your camera and makes everything look weirdly exposed.

I live in a largely hispanic area so I remember there was this big epidemic of schools making PSAs that if you eat takis or hot cheetos your stool turns red and NO you aren’t internally bleeding because there were a bunch of kids going to the nurse claiming they passed blood

You could soak the chips in a little bit of hot water and then add that water to the meat once ground. If you really mix it up, they'll be fully incorporated and help give the meat a very snappy texture

Did you ever buy those popcorn seasonings at the movie theatres? If so, the brand was probably Kernel Season's. Lots of variety to try there like cheesy jalepeno, garlic parmesan, kettle corn, there's just a lot.

In a lot of these sausage videos, I think a regrind AFTER the mixing would help a lot with incorporating the flavour and make a better texture on the hawt-dog.

I'm pretty sure it's left unbolted for cleaning purposes. If it was attached to something it would be 200% harder to clean

You don't need to bolt the item itself. If you have a stand with bolts sticking out you could put it on said bolts and then lock them down with some simple clamps. Keeps it locked in place and is also easily disassembled for cleaning.

You have the dehydrator now so you could do a regrind. Soak the takis in water then dehydrate the taki water and use the spice on the sasuages

To get takis flavor: Grind takis, briefly boil takis in water to get flavor off, filter with fine mesh sieve, takis tea!, boil/simmer down takis tea until significantly reduced (syrupy?), add to pork, sausagify, ???, profit.

Taki spice 1 pkg Lemonade or Lemon Lime Kool-Ade. 1-2 tsp sea salt. 1 rounded tsp chili powder. 1 tsp habanero powder. 2 rounded tsp cayenne powder

you can definitely buy straight taki dust in a shaker from a few places online. they got the regular and the blue taki dust as well as some other magical stuff. i’d kill to see a blue taki dust sausage

You should make your own Taki powder and try this again. Still add the chips but have extra flavor on the side. Maybe throw in some tajin and or lime. That could make a fantastic sausage

At mythical kitchen, the chef devised a taki powder recipe if I recall correctly, so you could try just adding the flavor if you really wanted a takis fuego flavored sausage without worrying much about consistency.

Mr. Sausage, Josh from the Mythical Kitchen has reverse engineered the recipe for Takis seasoning if you want to get more of the flavour punch. Also, you guys need to do a collab, he's a better chef than Bopping with Bambam anyway.
