As other people have said below, I watch an episode nearly every day and it is what has got me through our Lockdown through the winter months, here in the UK. The music and views, as the filming pans over the area is just beautiful and brings a peace. There are a lot of troubling matters going on in England at the moment, politically speaking and this vlog centres and calms me - especially after reading the papers! Thank you.

I so enjoy your videos. How beautiful that winter market is. My maternal great grandmother emigrated to the USA from Vaasa Finland and my maternal great grandfather emigrated to the USA from Stockholm Sweden in the late 1890’s. How wonderful it would be to be able to visit both Sweden and Finland to see where they came from. Your videos give me an understanding of how resilient and strong people from there really are. I'm also raising my own chickens and meat rabbits and, like you, I'm having a hard time doing what needs to get done. That being said, when you put yourself through the whole process, you learn to truly respect and appreciate what keeps you alive.

Your videos are amazing. With bone broth or veggie broth, I use scraps of veggies. I save potato skins, carrot and salary ends, onion and garlic peels and use those for my veggies. I eat the veggies and use what's left. Makes a nice dark flavorful broth. However I can't have livestock where I live to feed them, so I freeze the scraps until I'm ready to make and can broth or soup then compost the used veggies.

@@Talasbuan if you eat a lot of veggies in summer, you can keep the scraps the same as veggies. I keep mine in fridge but a cool dark place would work. But eat enough veggies to use scraps within a week to use in summer. I don't eat as much fresh veggies in winter. I eat mostly meats in winter so I freeze the veggie scraps I do have.

It has taken us 10 years (during holidays) to build our off grid place & we hope to be living there permanently next year. It is lovely to see the snow as it is heat wave weather here with bush fires all up the coast, so a lot of smoke in the air for weeks now. Hope you have a wonderful Christmas.

I used to have a really hard time with the lack of sunlight . Then, I learned to love the winter. Learned to have candles, fluffy blankets on my porch and on my couch.. just learning to say instead now I have to be in the dark and I have to use lights ect. Now I learn to say . OHHH the sun went down!!! Now I get to light candles, and have some slow time. It really did help.

We have a similar folk museum here in Wales called St Fagans on the edge of the capital - Cardiff. It was inspired by the Skansen museum in Sweden. Most old Welsh buildings were made of stone so moving historic buildings to the site to preserve them is a difficult job. When we were on holiday in Scandinavia we visited Maihaugen in Norway, another beautiful museum with over 200 historic buildings. I am still busy catching up with all your vlogs but they are my treat to myself at the end of the afternoon.

The best bone broth!! I also do our beef bones and put apple cider vinegar. Its so delicious. The flavor is amazing. The market looked wonderful. I seen little bowls like the one you made. The hides were really nice. I can see where you can get inspired. My little grandma is 107 years old. She will be 108 in March if she makes it that far.

Missing the timbering in favor of seeing traditional Scandinavian Christmas celebration and local handiwork. That video was quite nicely done; showing more of you subtle style -- quite a treat I had not expected. Even so many thousands if miles away, this old man's heart is warmed and excited in anticipation of our first sight of the coming new light in your lives. When trying to catch chickens in the open, get a piece of reasonably stiff fencing wire. Then make a Shepard’s hook at one end. You will now be able to slide the hook end under the chicken, pull towards you quickly and you will now have the chickens leg caught. Super video. I do love your sincerity and your wonderful videos. Using a pole net, like the kind used for fishing, would make it much easier to catch chickens. Seeing the Christmas market is interesting as they are not common in the states like they are in Europe. And the mythical creatures are very fascinating. All the aerial shots are really beautiful.

In English the first stomach of a chicken is the crop. Try chopping up some ginger root and adding to the cooking broth. Adds a nice layer of flavor. Peace.

Haha! Yes! They are the most northern heritage breed found in Sweden. They don't like the new snow so much but they don't mind ice and packed snow. Only if it's below -25°C or so they stay mostly inside the whole day. What kind of chickens do you have?

Awesome video as usual (great market)! However, I have to admit that I am getting a little lazy e.g. I hate plucking chickens so I build myself a chicken plucker (whizzbang chicken plucker) and I can tell you that plucking chicken has become a joy/fun now. Takes about 5 sec per chicken to pluck it perfectly! We raise&kill about 35 meat birds/year for our family (2 children). Since I build the plucker myself I can fix it (it is easy&basic to build+maintain). Even though it cost me close to 1000$ to build it, I am so happy I did it and that we have the plucker now (one could build it for less if you take more time shopping for materials,..). I don't like the killing part too much but its done quickly and works good (I put the chicken upside down in a cone and cut the head off with a stiff&sharp knife). But its always a trade with money, time,energy and an art to find the right balance. Looks as you two are on the right track, keep it up. Greetings from Nova Scotia

I think it must be very hard to choose which animals to butcher, when you love them so much. And by eating every part you surely honour their life. I don’t miss eating meat because the meat you buy at the supermarket doesn’t taste of anything. Especially chicken, I feel it’s the sauce that gives some flavour, not the meat. But I remember the taste of chicken from my childhood. My grandma used to buy alive chicken to butcher from the market (from farmers stalls). That was tasteful. You can see that Tuva is pregnant as she is glowing and also feels hot temperature in the house. I remember that feeling too, the baby growing felt like a personal oven 😄 With so very little light during the day Mathias should not feel bad for not being able to do timber work. I guess already looking after the animals take most of the light time.

have a story : when my peach trees hit, i can stand around under the trees with the deer and eat peaches and they are not afraid of me or run away the deer are very noisy smacking their lips, then they spit the seed out! so it makes it hard for me to hunt them and their not dumb they stay away from me during hunting season

If you have a sturdy piece of wire about four feet long and bend it like a hook and put a wood handle on the other end you can walk up to the chicken and catch it on its leg.

Thank you for showing us the level of the sun. That always intrigued me when I was in Sweden. The Christmas market was spectacular too see! ❤️ You both look so happy together with the baby on the way. God Jul och Gott Nytt År!!! 😊

Most of my time was spent in Norrköping in 2000 as I stayed with a friend who was an English teacher. I visited Linköping, Söderköping and Stockholm for my final 4 days. Did a lot of hiking along the lakes, eating traditionally as I was with a family, not there as a tourist and learnt how to take the tram by myself and eat pastries without knowing any Swedish back then. (Google translate didn’t exist back then!!! 😂) A big smile and pointing at things helped me out a lot but so did the children around me as they could speak in English to the cashier for me. 😬 It was a beautiful experience ... ❤️❤️❤️

That’s too funny!!! Many days I would try and do the tram. The coins for were awkward so I would simply put my hands out and the driver and he would take what I owed. I loved going to the pastry shops alone though. There were was on the Main Street and I loved it so much and even if I couldn’t speak Swedish they knew me and smiled every time I walked in. They knew what I wanted also. You know what? Barriers of language truly have no barriers because sometimes you can just be yourself in another country and it all works out well. 😊

Talasbuan back in 2000 no english was ever spoken much in Sweden (even in Stockholm) from my travels just the kids spoke English. That was 20 years ago though so things might have changed.

You might be interested in a KZbin video called - Grandfather. It is a video of a subsistence farmer in Latvia. He just uses horse power. You might find the crops he grows useful as what can grow in your area. I know in Alaska the cabbage there grew fast and very very large.

Yes! it's so good. That is how it is, we just have to get over it :) Have you ever done some chicken noodle soup from scratch? I feel we need more chicken recipes. Thank you, we try our best to keep it tidy, sometimes it is not so easy when we're building things. /Mathias

Try to consider how the chicken dies and why. We are more humane than most predators and isn't it better that they don't suffer lingering painful end from disease, frailty or injury? A wholly natural act of respect and mercy.

@@Talasbuan oh my, my comment was in no way judgmental! I have helped butcher many chickens. It was a way of life for us as farmers. No matter how often I was involved, I have never gotten over the difficulty. I would say that all animals on your farm only ever have one bad day and they never even have to realize that. I admire so much how you do things, very conscientiously, intentionally and practical. Keep up the good work and the videos. I look forward to each one

I have a question from your video about finally getting pregnant.. You mentioned your concern about eating vegan for a period of time and how that might have affected your health? Can you talk a little more about that? I have had health problems while in a strict vegan diet and am wondering what you think about this issue?

I personally believe that veganism in the long run is dangerous. That is what my personal experience tells me, and also all the existing science about food and health. That is also what history tells us. There are those who says it isn't so, but I have yet to find a good enough study that says a vegan diet would be superior and healthy. It is mostly very bad science when you look closer or just epidemiologic studies. Hope I could help /Mathias
