Look so good! I made chocolate yesterday with meringue. I started making my cream pies and pudding for banana pudding in the microwave. Made it on the stovetop for many many years!

I use powdered sugar when making my whipped cream & add a little vanilla. The powdered sugar melts right into the cream. So good!

Living in Dallas, I love the rain, too! I hope it stops flooding in places, but I do love the rain...not looking forward to this summer, you know it's gonna be HOT. ❤ You can also use or make a meringue for the topping, like you'd do for a chocolate pie. I've never eaten one with whipped topping before but yours looks so good I'm trying it your way for sure. Thank you for all your good recipes. Brings back so many memories.

I have looked for this recipe for years. Asking my relatives if they had it, no luck. My memories of making this with my mother years ago. She was from Oklahoma and this is the recipe from the south. I remember stirring and stirring . Toasting the coconut. Always looking for the recipe, never finding the same pie in the restaurant. Boy was my mouth watering when you were done. I love Pie. It's my favorite. You toasted that coconut for the pudding and that is right! A lot of recipes don't. I haven't made coconut pie in years. I have been watching many of your videos and I am way behind. I will say that your thumbnail keeps coming up on a chocolate cake you just made. I am not big on cake. Just every so often. My favorite too! Especially with the toasted coconut. 😋 My husband does not like coconut so I don't make it unless I'm having company or I'll eat the whole pie! His favorite is chocolate or the Amish peanut butter pie so always have to make 2 pies. Have you ever made the Amish peanut butter pie with the peanut butter crumbles? It's a great pie also! I can send you the recipe if you like? It's just the same vanilla pudding with the pb crumbles layered in and on top.

I’m going to try this recipe with coconut milk ,! I’m allergic to cows milk ,plus recently diagnosed with chrons disease ( no milk or butter) 😢 will also have to make the meringue with egg whites ,,,,, hope it turns out good 🤞🏼🤞🏼coconut pie is my favorite ❤️
